Boilermaker Tailgate Chili

This has pretty much everything I put in my own chili. I'm a kind of "throw everyting in the pot" kind of cook and usually don't measure anything. I folowed this recipe exactly and I have to say.....I like it much better than my own. I discovered I was putting waaaay too much beer and other spices in my own. I thought the measurements of seasonings was perfect. Really thick and meaty. I recommend cooking it at least 2 hours (or more). The tomatoes break down nicely and the flavors are developed. I did add more chili powder in the end as suggested. Makes enough for a crowd and goes together quickly. Yum!

Sweet and Sour Chicken Tenders

Made exactly as written. My husband & I really thought this was yummy. Next time I think I will add some chili flakes to the sauce to give it a little heat as well. Served it with fried rice and a veggie. The sauce thicken up nicely and coated the chicken. I would for sure make this again.

Easy Decadent Truffles

Did a test run on these prior to making them on a upcoming wedding dessert bar. Everyone loved them. I dipped half in white and half in choc coating (wilton brand) and drizzed a design on top. Made exactly as written and they were melt in your mouth in the middle. I would recommend using quality chocolate chips. They seem to provide much better taste and texture.

Herb-Glazed Roasted Turkey

I have never added anything to my turkey except salt & pepper when roasting. Thought I would give this a try for something different. I liked it! Made exactly as written, except used a 7 lb. bone in turkey breast. Cut the seasonings in half and it worked out perfect. Browned nicely and stayed super moist.

Easter Basket Cake

Thanks for all the cool pictures to inspire me to make my own basket cake! Did a 2 layer choc. cake frosted with a basketweave tip. Used a piece of clear,flexable tubing (bought for cheap at Lowes) covered in ribbon for the handle. Secured with long bamboo shish kabob sticks. My Easter guests thought it was a real basket. : )

Cake Balls

Used Duncan Hines Red Velvet cake and Pillsbury whipped cr cheese frosting. (not very cr cheese taste - didn't have time to make my own though) Let cake cool completely then processed a little at a time in a food processor - pulsing only about 5 times per batch. Only had to use 3/4 can of frosting. Didn't want them to be mushy as other reviews stated. If it starts crumbling when rolling into balls - try washing your hands. Little bits sticking to my hands seemed to make them not want to hold together. Refrigerated till chilled. Dipped in Wilton white bark pieces. For a garnish I took the same bark pieces and pulsed in the food processor and made them into tiny little flake pieces. Let the dipped cake balls harden just slightly then sprinkled on top. So pretty! My daughter is having a "Brave" themed b-day party and wanted to work something red into a dessert because the main character has bright red hair. Worked perfect! : )

Sugarless Pumpkin Pie II

Made this for my father in law who recently found out he was a diabetic. He said this had a really good taste considering it had no real sugar, but wished had a little more filling. He's still adjusting to not being able to eat a whole pie by himself. Ha! I would for sure make this again.

Exquisite Pizza Sauce

I made this exactly as written. I will for sure make again with one change. Next time I'm only adding 1T honey. It was a little too sweet for our taste. Other than that, it's great. Just the right heat level and the spices were perfect.

Lemon Pie Bars

I have never had luck with anything lemon except maybe a cake. The filling never sets up for some reason. I am happy to report that I had great success with these. Some had complained that there was too much crust. Mine had equal crust and filling, which is perfect for my taste. The crust is yummy - flakey and buttery and holds together well when you cut it. I stored in the fridge overnight. In the morning I dabbed the top with a paper towel slightly before putting on the powdered sugar. Seemed to help it not to melt away as fast. I will be making this again.

Kyle's Favorite Beef Stew

I made this as written except used Lipton Beef and Onion soup instead of just onion. Thickened up perfect and I thought the meat to veggie ratio was perfect. My hubby doesn't care for stew much but will eat anything with lots of meat in it. Ha! Next time I make this I will probably add some thyme & basi just to give it a little more flavor.

Ratatouille Bake

I thought this was just yummy! I made it exactly as written except I added a little more salt and used a 12 oz bag of frozen ravioli instead of 8 oz. There was plenty of sauce for the extra pasta. Baked in a 9x13 pan. I'm a huge fan of eggplant and will try any recipe that uses it. This did not disappoint. : )

Green Bean Casserole I

Same casserole I've loved for years, but after reading other reviews I took some of their advice. (even though it bugs me when people totally alter a recipe) : ) - I added about 1/4 C sauted red pepper and 1/2 t. garlic powder & 1/2 t. pepper. Just added something more to a family favorite and made it more interesting.

Italian Spaghetti Sauce with Meatballs

This is a great basic sauce. Nice and clean tasting compared to the sauce I usually make that has tons of spices and lots of sugar. I made this exactly as written. My husband thought it was a little too chunky, so next time I might use diced tomatoes instead (maybe....I loved it as is). I also might put in a few red pepper flakes for a little zip. Like other reviewers, I questioned putting in the meatballs raw, but they browned nicely and flavored the sauce too. Yummy!!!

Harvest Pumpkin Cupcakes

I made these for a wedding. I was a little nervous as I didn't do a test run to see how they were beforehand. I got 30 perfect rounded top cupcakes. I had to add about 1C extra powdered sugar to the frosting (I was piping it) and left out the OJ & zest , but added cinnamon. (It's what the bride wanted). They were delicious and I received many compliments on them.

Chicken and Biscuit Casserole

I had to submit a review for this. Anything my husband says is "delicious" three times during dinner and twice later that night deserves 5 stars. Very comforting meal on a cold day. Made exactly as writted except substituted frozen peas for canned. I just like them better. Good flavors too. I am a fan of basil. : )

Lemon Cooler Cream Cake

This is a blast from my past. My mom always made this at Easter. I made it using lime jello and didn't add jello to the topping just because my mom made it that way. Sugar free jello/pudding tasted great. Couldn't tell the difference.

Pineapple Cake III

I made this for a birthday treat at work. Everyone really liked it and I was asked for the recipe. Very easy to make and the frosting was yummy too. I usually put margarine in my frosting, but butter is just so much better. It's a heavy cake, but I like that texture. You can tell it's home made vs. a box cake.

Coconut Poke Cake

I know people don't say this anymore, but......this cake is the BOMB! Ha! Made exactly as written. My cake mix was only a little over 16 oz - so I added a few T of flour to get it closer to the ounces specified. Added the coconut to the cool whip before frosting and added some toasted coconut to the top. Garnished with cherries with the stems on. Very cute & so delicious!!! I got two requests for the recipe and was almost embarassed to give it because it's just so easy. Thanks for sharing!!!

Best Lemonade Ever

I guess I will add my 2 cents too. This was delicious. I have made my own before, but didn't taste as good as this. Maybe it's the simple syrup step? Not sure, but it was so good. I microwaved my lemons and used a large bbq tong handle to squeeze the juice out. Made it super easy and almost every drop came out. Thank you to other reviewers for that suggestion. : )
