Sausage Balls

These are not elegant, but they are irresistible. (It's hard to go wrong with pork sausage.) Although none of the sausage ball recipes explicitly state it, the sausage meat should be removed from the casings, and should not be precooked. I followed the advice of many and brought the sausage to room temperature and grated my own cheddar. I also mixed the sausage and Bisquik in the food processor and added the cheese by hand afterward. I baked them on a parchment lined pan for 20 minutes. They emitted a lot of grease, which I counteracted with paper towels when done. But next time, I would use a broiler pan or Alton Brown's technique of perching them in the cups of a mini muffin pan. The grease drips out into the cups.

Pear and Almond French Toast Casserole

My kids loved it! I had some stake French bread and some very ripe pears. It came out lovely. It wasn't too sweet at all, which was perfect. But those who like it sweet may want more sugar in the egg batter.

Caramelized Turnips

Meatball Nirvana

These meatballs are pretty awesome. I needed a tasty, general purpose meatball and hit the jackpot with this one. I have so much beef in the chest freezer - just made a quad batch of these. The kids love them. I opted not to include the hot sauce but did add the hot pepper flakes. For us, it totally Goldilocks (just right).

Poppy Seed Salad Dressing

Loved it! I reduced the sugar as others did, and found it on par with Brianna's and Drew's poppyseed dressing. It was super easy with an immersion blender, too. I used it as a marinade with garden veg. Kids loved it, too.

Marinated Scallops Wrapped in Bacon

I served these at Easter and they were a huge hit! I rendered the bacon, let it cool a little, and then wrapped the marinated scallops. I baked them at my parents' house. They transported well, cooked beautifully, and tasted amazing. It was an easy, yet decadent appetizer.

Hearty Morning Muffins

I love the ingredients and it made tasty muffins, but they were very oily. I also cut the sugar in half and they were still quite sweet. Next time, I'll substitute applesauce for most of the oil and cut the sugar further.
