This was a big hit with my family.... I did however double the recipe.. The serving size say 8, however, we use bigger bowls (like chili or rice bowls) and my family of 5 likes to eat... I also like to have some leftover. Doubling the recipe ensured that my entire family had a nice bowl of soup and there was enough left over for seconds and even some for lunch the next day. I did not cook my chicken before adding to soup. I simiply added everything together and cooked it in a big pot right on the stove since I had doubled it. I did shred the chicken after 3 1/2 hours... I did add cooked brown rice after shredding the chicken as one person suggested. Once the soup was served in bowls, I added chunks of avocado, some shredded cheese and a squeeze of fresh lime to each bowl. Lime is a must!! Adds great flavor. I tried to make the tortilla strips, but they burned the first time in the oven, make sure to keep an eye on them, 15 minutes is way too long... I then tried them in the microwave for 4 minutes on half power.. Some of them still managed to burn but those that didn't were very tasty... I ended up using regular tortilla chips in the soup and everyone loved them just the same! My 12 year old daughter wants me to tell you the soup was phenomenal! Again a big hit! Will most definitely make again.
