Cheesy Ham and Hash Brown Casserole

Very tasty! I took it to my office and it disappeared. Highly recommended. Having said that, while I intended to make no changes, I was overcome by events! I went to the store and forgot to get ham. So I ended up using some andouille sausage I had in the freezer. I cut up two sausages (Johnsonville) and it wasn't enough. You couldn't really taste the meat. I find this recipe to be incredibly versatile - I think you could use bacon, ham, sausage or even ground beef. I'm guessing you really do need 8 oz. - I went light on the andouille since I didn't know how spicy it would be. I also used O'Brien potatoes instead of regular hashbrowns. An excellent change! I used the cream of potato soup and all cheddar cheese. Two cups in the mix and a then a cup spread on top instead of the parmesan. I've also decided that if you take out the meat, the recipe would make a fantastic potato side dish. Either way, a total keeper!

French Toast Casserole

Very easy to make and yummy! I didn't change any measurements, but I did use egg beaters rather than eggs. Smells delicious while baking. The sugar/cinnamon mixture makes a very nice crust coming out of the oven.

The Best Vegetarian Chili in the World

Tastes even better the next day! I won the People's Choice Award in my office's Chili Cook-off with this recipe. I think the veggie burgers really give this chili a unique flavor and a lot of body. I put in about 1/2 the salt and about 1/4 of the cumin. I'm not a huge cumin fan because it tends to overwhelm a dish. We'll definitely make this one again. YUMMY!!

Mexican Wedding Cookies

Awesome cookies! Very easy to make! I substituted walnuts for the almonds (had them already) and no problem. I made about 8 dozen for a work function and they were all gone! I tried sugaring the cookies before baking the first batch and I didn't see a difference. I did as others suggested and sugared the cookies while still warm and then again after they had cooled. They were very very sugary. Yum!!

No Bake Peanut Butter Pie

So easy and delicious! This was a hit at a casual dinner party. I put the pie in a chocolate cookie crust and served with chocolate sauce. I will make this again! Yum!

Lemonade Cake III

Yummy, yummy cake! Huge hit at a recent cook out. Taking it to an office party too. Considering making it a Margarita Cake by adding tequila to the glaze and using limeade instead of lemonade. I'll let you know how that turns out! Thanks for posting!

Taco Seasoning I

Excellent seasoning! I used this in a chicken dip and it was great. I prefer using something like this rather than a sodium packed, store bought taco seasoning. I gave it 4 stars because I think the cumin is way to high. A little cumin goes a LONG way! I used about 1/2 tsp only and the taste is still present but not overwhelming. Thanks!

Awesome and Easy Creamy Corn Casserole

My first attempt was a little soft - it didn't set up very well. Nevertheless, it disappeared at dinner! I made it for Thanksgiving and got rave reviews. It's in the rotation now!

Corn Casserole III

I think I added too much whole corn and it took longer to set up than the 45 minutes. I turned off the oven and left the casserole in to set up - it took about 30 minutes. It was delicious and everyone like it a lot. I'll make it again using the right amount of everything. Any issues I had with this recipe were operator error! Yum!!

Peach Cobbler Dump Cake I

I took this to the office and it disappeared in a couple of hours. A keeper! Like other reviewers, I used peaches in lite syrup, used only half the juice, sprinkled cinnamon over the peaches before putting on the cake mix, and sprinkled brown sugar and cinnamon on top. I put the butter in the freezer and shredded it before putting on the cake. I think slicing it would work too. This comes out way more like a cobbler than a cake, but so incredibly simple and so incredibly delicious. Next time I'll serve with vanilla ice cream. YUMMY!

Too Much Chocolate Cake

Excellent cake! I made it for my office as a test for another event and they loved it! One person suggested buying an oven for the office. =) I used chocolate fudge cake mix and mini chocolate chips. Fantastic!! The mini chips really up the gooey factor. DH thought the cake was a little oily, but I didn't want to change a good thing before the real event. Next time I'll try half oil and half milk. I'm also going to try the mint variation and the peanut butter variation. Oh, and I dusted it with powdered sugar only. Anything more and it would be too sweet. Thanks!

Tin Roof Sundae Pie

I made this for a picnic and it was a big hit. Very yummy! I used Honey Bunches of Oats cereal and it didn't fit in a pie plate. I ended up using a springform pan and it worked great. I used only 3 tablespoons of the corn syrup so it wouldn't be too sweet. Next time I'll probably try honey instead of corn syrup. This is a keeper!!

Basic Corn Muffins

I was looking for a quick and easy corn muffin recipe and this was it! I made three batches for my office chili cook-off and they were a huge hit. Not too sweet but not too savory. I didn't make any changes. This is a keeper. Thanks!

Sangria! Sangria!

Very tasty and a hit at the party! I substituted Citron Rum for the brandy, used triple sec, eliminated the sugar and used 7-Up instead of club soda. I do recommend having some of the soda available for your drinkers to mellow the sangria if needed. For reference, I used "2 buck Chuck" Merlot from Trader Joe's. I made a double batch and used 2 oranges, 2 limes and 2 lemons per the recipe. Next time, I'll use one of each for a double batch just to save space in the pitcher and glasses. Also, I recommend halving the orange slices so they fit in the glass better. Will definitely make again! Thanks!

Butter Pound Cake

Excellent cake! I topped it off with the chocolate ganache from Allrecipes and it was a hit! I took it to a party and with all the other desserts, I didn't bring back one piece. I'm going to make it again and again!
