No Bake Pumpkin Pie I

absolute perfection! I used a nilla wafer crust (delicious), low-fat sweetened condense milk, 1 egg with 1 egg white. The consistency of the pie was perfect, the right blend of pumpkin and sweetness. I think next time I will buy a regular pie crust and blind cook it in the oven. Addendum 9/10/2010: STILL my favorite pumpkin pie, I am convinced the stove top method is why those pumpkin pies from Wholesale clubs are soooo creamy. I still blind cook my shell while stirring on the stove top, then I pour mix into shell and bake for 15-20 minutes more. Then refrigerate. PERFECTION every time!

Thin Mint Crackers

While this recipe was delicious it was extremely messy and still difficult to handle even when using a fork. This will probably be a one-two time a year recipe. I used milk chocolate chips and top off with sugar crystal sprinkles.

I have been making this for years. We call it Moonstruck eggs cause when watching the movie "Moonstruck" they were cooking it using italian style bread. Such a simple awesome breakfast.

Ricotta Stuffed Squash

beautiful presentation and the filling is fantastic (with minor changes). I boiled and then baked my squash (brushed with oul and lightly seasoned with salt and paper)...however the squash was still semi-hard in some places so next time I will microwave then bake. For the filing, I sauteed the onion, garlic, and scooped out squash with butter and olive oil...I also added one small seeded jalepeno pepper. While sauteeing I salted the veggies and then added the spinach which I salted to taste later. We used the left over filling to make pizza and plan to use the filling for a sauceless lasagna. Do try!

Halloween Popcorn Pumpkins

This recipe was very good and fast to make...here are a few suggestions: 1. Beware of left over kernels from microwave popcorn, they definitely can hurt a tooth. Popping your own popcorn on the stove prevents this and is just as fast. 2. Put a couple cubes of caramel in the marshmellow sauce, this really makes a diffence! I did one sauce with and one without...the caramels add something that was lacking. 3. For a more vibrant orange use 4 drops of red and 5 drops of yellow. 4. Add few loose marshmellows to the popcorn mixture. 5. To evenly distribute the candy corn and peanuts, pour them ontop of the popcorn and then pour the sauce.

Chantilly Cake Frosting

Pretty good. A little on the liquidy side, not sure if that is how it is supposed to be. Everyone enjoyed, didn't realize this is like german cake frosting.

Perfect Apple Pie

It is absolutely amazing how simple yet delicious this recipe is. What takes time is slicing the apples and it is worth it! The only thing I did different was to use 1/2cup white sugar and 1/2 cup brown sugar (I like the taste and texture brown sugar adds).

I made these for a bake sale and people loved them. I found them to be a little buttery for my tastes and they didn't stay round. But if I ever did a bake sale I would make again, they went super fast!

suggestion: I made another flan recipe and added cream of coconut (sweeter and creamier than coconut milk)+ low fat sweetened condensed milk + 2 eggs + 4 egg whites + 2tsps vanilla extract

Caramel-Glazed Flan

Excellent Flan and here is an awesome variation! I used liquid egg whites + 2 regular eggs, 2 tsps of vanilla extract, and a can of COCO LOPEZ Cream of Coconut in addition to the the low fat sweetened condense me...oh my god, the cream of coconut made this dish so delicious and creamier. Then I topped with sweetened flaked coconut. Also, I didn't use any salt or melted sugar.

Award Winning Soft Chocolate Chip Cookies

this is it...I have found my cookie recipe...i can't wait to make this with different flavor puddings and chip mixes...no muss, no fuss! Update!!! I am still convinced this is the best recipe. I just made this with chocolate pudding, 1/3 cup cocoa powder, and white chocolate chips to make a delicious chocolate cookie. Perfect everytime and freezes so well!

Turtles® Cake I

Delicious, extremely rich. I followed all the directions to a "t"...I don't know if this happened to anyone else, so I thought I would warn. M caramel became like a volcano (lifting the cooked top layer)after putting in the caramel and second layer of cake. So beware, it my be a little messy and don't burn yourself.

Caribbean Sweet Potato Salad

A very delightful recipe. i didn't realize that it didn't ask for mayonnaise and it tasted great without it. However, we were in the mood for a mayonnaise based potato salad, so I added 1/2 cup and it tasted wonderful with it too! I omitted the onions. Wonderful recipe, will make again.
