Special Buttercream Frosting

Reviewed: Dec. 4, 2011
I am giving this a 5 even though I think that I improved it by using half butter flavored shortening and half unsalted butter. I also used clear vanilla flavor since I needed white frosting. When I don't need white frosting, I use vanilla bean paste which is my secret ingredient. It takes it over the top in my opinion. My entire family thinks that I am the best baker, but all I am is a home baker that has some really great recipes and basic cooking skills.

Bread Pudding II

Reviewed: Aug. 25, 2011
This recipe is pretty much like mother's exact I couldn't remember the measurements of hers. The only thing I did different was to use a half stick of butter, 2 cups of evaporated milk instead of whole milk and 1/2 tsp of nutmeg. I also cooked mine in a waterbath because my family likes a custardy type of bread pudding. Based on others, I used 9 slices of bread and one less egg. Lastly, I added about 1/4 tsp of salt as I do with all desserts. Salt brings out the flavor of whatever you are cooking whether it is sweet or savory in my opinion.

Nell's Macaroni Salad

Reviewed: Aug. 20, 2011
I know this recipe calls for sweet pickle juice, but I also added some sweet relish because I love it. I thought it was sort of weird to use mayo with Miricle Whip (creamy salad dressing), but they both do have distinctive flavors. Just never would have thought to mix them. I also added some black forest ham chopped up which gave a really nice flavor. Also, honey baked ham works good too. I love corn, but I really just didn't want it in my mac salad. I added a couple of boiled eggs instead. I used smoky paprika which imparted a really nice flavor to me. Now that I think about it, I basically made this the way I make my potato salad except it has mustard in it. Make sure to salt your water when cooking your pasta because you only really get the one chance to get the salt into the pasta. It has a better flavor than adding salt on top of the cooked noodles to me.

Strawberry Cake I

Reviewed: Aug. 20, 2011
I used a yellow butter cake mix that worked perfectly. I also used an entire box of gelatin and I didn't fine it too sweet as many have said. I think a cake is suppose to be sweet, so call me crazy for my thinking. Anyway, I also added a one tsp of vanilla flavoring which I always add to box cake mixes. I used a 9 X 13 pan along with fresh strawberries that I pureed. Lastly, I just put a powered sugar glaze that I make up that includes milk, butter and vanilla along with the powered sugar. It's light and goes very well. I will try the whipped cream cheese frosting eventually.

Strawberry Cake II

Reviewed: Aug. 20, 2011
I always have yellow cake mix so I decided to make it with it. I don't see how a white mix would have been better because my cake came out very well. I did use 3/4 c oil and 3/4 c of water because that's how my lemon jello is made. It worked and I used a powered sugar glaze that had milk, a little butter and vanilla. I just drizzled it on it was fine. I have also made this cake with a cream cheese frosting too. The glaze seems to be my favorite since it is lighter.

World's Best Lasagna

Reviewed: Aug. 20, 2011
I seasoned my ground beef with salt, pepper, garlic and onion powder since some people said it was bland. I also used half sweet and half hot Italian sausage. I added a pinch of red pepper flakes and a bay leaf to the sauce along with a splash of red wine. I let it simmer for about 2 hrs. I used more cheese and this the best lasagna I have ever, ever tasted. I had a really good recipe, but this one is better. Thank

Buffalo Chicken Dip

Reviewed: Aug. 20, 2011
I thought this dip was very good and also quick and easy to make. The only change I made was to use rotisserie chicken because I absolutely hate canned meats except or tuna. When I have left over, chicken, I'll make this dip for the family. They love it too. It so nice to have something so simple taste so good.

Cream Cheese Pound Cake III

Reviewed: Mar. 18, 2011
I have been using this recipe for years and absolutely love it. I do use more vanilla and also add 1 Tb of lemon exact too. Oh and I also add about 1/2 tsp of salt. I think a little salt always makes a cake taste better. I also sell this cake for $25.00 in Los Angeles and I forgot that I also add a lemon cream cheese glaze.

German Sweet Chocolate Cake I

Reviewed: Mar. 18, 2011
I have been making this cake as well as selling it for over 20 years and everybody loves it. The only change I make is to add the vanilla flavoring after the frosting is made. It has a better flavor and you don't cook out the alcohol. I even decorate my cake the same way except my center has a cherry. I sell this cake in Los Angeles for $35.00 and I may go up another $5.00. In the 80's I sold it for $20.00. Ten dollar increase every decade seems reasonable to me.

Pot Roast in Beer

Reviewed: Jan. 19, 2011
My husband absolutely loves this roast and for me it's okay. I like using lipton onion and golden mushroom flavor better and it's also much easier. I used a chuck roast and I also used golden mushroom instead.
