Potato and Bacon Salad

This is very good. It is not mind-blowing, but it is very appetizing and SO much better than buying store deli-counter potato salad! I substituted about 1 1/2 tsp of celery seed as the texture of celery does not appeal to me. It had that nice hint of flavor without the weird raw crunch. Instead of salt and pepper, I used Mrs Dash Table Seasoning...and this was a fine substitution as well.

Refreshing Summer Orzo Salad

As a side dish, this does serve way more than 8 as others have said. I skipped the kalamata olives (substituted regular black olives) and skipped the capers entirely. The salad was still salty and tangy without these additions. Delicious recipe as otherwise posted. Tasty leftovers as well. Next time, I might add a bit more lemon juice.

Slow Cooker Buffalo Chicken Sandwiches

I made about a triple batch of this for a holiday potluck at my office. It was a nice change of pace from the traditional potluck items (meatballs, chili, etc). It didn't receive any specific rave reviews, but a good portion of it was eaten, so I'll take that as a compliment. It stayed moist after several hours (well above the recommended cook time). I think it was due to my packing my slowcooker to the brim with chicken. On the whole, a pretty easy recipe. Just make sure to serve it with a really good quality kaiser roll...makes all the difference.

Green Bean Fries

So easy to make at home. A wonderful treat...so much more flavorful than traditional french fries! I would recommend more chili powder which helps add more "color" and flavor to the batter. Also, I only flash-fried the beans in very hot oil (just until the batter crisped and browned 10-20 seconds). I finished them in the oven for about 10 minutes at 375.

Smokin' Scovilles Turkey Chili

Busia's Cutout Cookies

This recipe was really perfect. The only thing I changed was adding a little more Vanilla extract and a bit of Almond extract (just because of personal preference) I did not refrigerate it before rolling, and it was just fine! The cookies turned out absolutely beautiful!

Chocolate Cheesecake

I was able to "slim down" this recipe, and it still tasted great. I used light cream cheese, egg substitute, skim sweetened condensed milk, and smart balance spread instead of butter. I also used 60% cocoa bittersweet chips to take advantage of the dark chocolate hype. It did not crack, travelled well for the holidays and baked at exactly the time specifications.

Dirt Cake I

This recipe is much fattier than it needs to be. I substituted skim milk, fat free cool whip, 1 regular size package of reduced fat oreos and an extra 8oz package of fat free cream cheese in place of the butter. It turned out to be very very creamy and all-around excellent. Couldn't tell the difference at all. I also used sugar-free pudding instead (1 vanilla, 1 white chocolate) which helps cut calories.

Best Ever Chocolate Chip Cookies III

A delicious traditional chocolate chip cookie. The sweetness is based in the chips versus the batter...a great change of pace. Produces a soft, but not chewy cookie. I used "Smart Balance" spread versus real butter and these turned out just fine. Bake time was a little bit longer though about 12 minutes.

Easy Key Lime Pie I

This tastes wonderful. I used the recommended 2 cans of sweetened condensed milk (fat-free) 4 beaten egg yolks and 1 c fresh lime juice (about 3 limes). I found it necessary to add 5 drops of green food coloring to make it pleasing to the eye. This turned out absolutely perfectly.

Cajun Paella

I made this for my mom for mother's day. To reduce fat, I used 1 lb of boneless skinless chicken breasts cut into chunks and 1lb of medium large cooked shrimp. I also used one box of dirty rice mix and one of red beans & rice. It also came in handy to not use all of the seasoning pack. I also used Pam garlic spray instead of cloves of garlic. This is not a recipe for those who like bland foods! :-)
