Artichoke Chicken Casserole

Made this last night, with a few adjustments. Added 4oz softened cream cheese to the mayo, and 1/4 cup milk. I also used boneless chicken thighs cut into chunks and omitted the mushrooms. Threw in some egg noodles and made it into a casserole. Wish I had used a little more garlic, but other than that, it was awesome! My family loved it too. Definitely going to make it again. Maybe add some spinach too next time.

Bacon-and-Egg Muffins

I have been making these for a while now. I lov that they are so versatile. Differences though: I put the bacon on a baker's rack on a cookie sheet and bake them at 400 for about ten minutes. Once cooled and blotted I line the muffin tins. We have topped the eggs with tomato, feta, cheddar, onion, pepperoncini, hashed browns, sausage... anything you can think of! The whole family loves them.

Healthier Quick and Easy Alfredo Sauce

I use a variation of this that I found on this site, and have for years and years. I use fat free cream cheese, and throw in a dollop of fat free sour cream, but I cut the butter to almost nil. Maybe two tablespoons. Fresh ground pepper, garlic powder, and sometimes the parmesan. Depending on the kind you use the combination of garlic and parmesan can be overpowering. We use it for many things and everyone loves it! Our favorite is to make tortellini, fry and slice italian sausage, steam some spinach and artichoke hearts, top it all with the sauce.

Cheesy Potato Pancakes

My daughter makes potato pancakes every Sunday for me, and I had her try them this way last time. She followed the recipe almost exactly, using a splash of milk rather than a half cup, real bacon, and mxing the butter into the cakes instead of with the oil. They were amazing! Crispy, cheesy, full of flavor! Wonderful recipe, thanks.

Roasted Garlic Cauliflower

Made this the other night, just for some variety. Used canola oil as we had no olive oil. And grated parmesan. It was awesome! My daughter, who hates cauliflower, was caught snitching food from her brother's plate! Everyone loved it. Definitely a keeper. Although I personally would have liked a little more seasoning, that is cook's issue, as I probably could have used a little more. Maybe some onion powder, or paprika.

Chicken Artichoke Casserole

So I have used the combo of "cream of" soups with Mayo for a different casserole. It makes an amazing mix, expecially when you add curry. Sorry to those who don't like this, but low/reduced or fat free mayo will RUIN this. It doesn't add the right zip, but rather a sweetness that is icky. ANYWAY! I made this for supper when we were down to the dregs before grocery shopping. Only changes made: out of lemon so used pepperoncini juice which is a decent substitute, and added egg noodles cooked al dente. Yummy yummy!

Cream Cheese Alfredo Sauce

So I used this recipe constantly, but it is my habit to make adjustments every time until I find a new twist that I like. This is a wonderful base to use when experimenting and testing your skill, and is also great when the recipe is followed. I make "my own" version of this sauce at least 4 times a month.

Waffles I

After reading many of the reviews on this recipe, we decided to give it a go using some of the alterations. We subbed out the oil for yogurt, doubled the sugar and vanilla, added cinnamon and nutmeg. We separated the egg whites and blended them, then added the yolks, milk, yogurt, vanilla and dry ingredients. The result was incredibly thin. It would not cook, but rather burned outside and remained gooey inside. We added another 1/8 cup flour hoping to solve that, and they cooked but tasted pretty not-good. Because we followed all the changes suggested I will not give 1 star, but we won't use it again either.

Chicken Pot Pie IX

I have made this a few times, and the kids love it. I have tweaked it a little with which veggies we use, but the rest done as written. Love the peppery flavor (we use fresh ground) in the gravy, and with the right combination of veggies we are all happy.

Baron's Blackberry Cobbler

My children got about 4 cups of raspberries from a neighbor for helping in her yard, so I suggested making a cobbler. My daughter (14 years old) used this recipe and it came out AMAZING! It was my girl's first cobbler, and it was better than mine! Just don't tell her I said that.

Chocolate Chocolate Chip Cookies I

We don't often make cookies at all. Or any kind of sweet. But I really wanted cookies... these turned out amazing. Mykids were able to help make them, which is always good. The dough was a little wet looking so we added about another quarter cup flour and a bit more cocao powder. Used Andes mint pieces instead of chocolate chips. They are chewy, soft, and full of flavor. Thanks for the great recipe!

Szechuan Beef

I read through the reviews and noticed most people left negative ones, which is usually when I look for the next recipe. For some reason I tried this one anyway, following a little bit of the advice given. I added a little extra red peppers,soy, garlic powder rather than cloves (all out), added cayenne and some Chinese five spice powder. Stir fried the beef in sesame oil, then aaded one small onion and the broccoli and green bell pepper. Turned out amazing. Kind of mellow flavor when you first take a bite, but by the time you swallow you can taste the spice and the subtle heat. The veggies were delicious, and my kids asked that I add this to rotation.

Shrimp Stir-Fry

I've made this a few times. The family loves it, with the exception of my daughter not liking shrimp (She picks it out). Only thing I did differently was use different veggies once or twice according to our taste.

Mini Cheesecakes

Made these last minute (nine pm!) on Father's day. Aside from deflating a bit as they cooled, they were great. Creamy and flavorful. I added some vanilla and cinnamon to the batter and crust.

Make-Ahead PHILLY Spinach Phyllo Roll-Ups

It has an amazing flavor, but doesn't hold together well. The phylly dough can't stand up to the filling so the whole thing kind of goes flat. Everyone loves it though

B.L.A.T. Wraps

We have BLTs at least once a month, and we all like it different. I don't like lettuce but I add cheese. My son has BLT with cheese, my daughter adds cheese and avocado, and my fiance goes without cheese but adds avocado. I can't believe I never thought to do it as a wrap instead of a sandwich. Thanks a bunch!

Cherry Glazed Ham

Let me start by saying I CANNOT STAND the traditional mustard-brown sugar glaze, not to mention I am mildly allergic to pineapple. The first time I wanted to make this I couldn't find cherry preserves at the store. But I happened to pick up some cherry-raspberry-rhubarb preserves and decided to give it a shot. I nixed the corn syrup, as we are converting to a paleo type diet. Used apple cider vinegar since that is what we had. Also was out of nutmeg and ground cloves, so used a little ginger (just under 1/4 tsp). A lil extra cinnamon and we were good. It came out AMAZING! Tangy sweet, could definitely taste the cherry, with an aftertaste of cinnamon and spice. Will make this again for sure.

Grandma's Carrot Cake

I used brown sugar in the cake rahte rthan white. I am allergic to pineapple so left that out. I added 1/4 tsp ginger. Maple syrup since I was out of vanilla. I didn't have applesauce but I had apples, so I oven roasted them and blended them and used 1/3c of that and 1/4 c oil. I also threw in blueberry flavored craisins. The glaze we cut 1/4c sugar out, made our own buttermilk, and again used maple syrup instead of vanilla. After all of that, it turned out AMAZING! It was a bit too sweet for my taste, but was still delicious. Next time I will make sure I have vanilla, cut more sugar, and hopefully have some nutmeg or allspice to help balance the sweetness. I was hoping for more of spice cake taste. And my daughter says more carrot than two cups. Still, this recipe is a keeper. Super moist and flavorful.

Tilapia Florentine

Used this as a base recipe. I didn't have the flavored cream cheese, so used plain and splashed some lemon juice in. Also a little bit of onion powder. Breaded the fish with panko crumbs, then baked it. Warmed the sauce and spinach, then combined them. Put a lil of the sauce on top of the fish. The kids loved it, and are always happy when we have it.
