Simple White Cake

Reviewed: Jan. 25, 2007
Simple and incredibly tasty! Instead of using vanilla extract I used orange extract (just because that's what I was in the mood for) and it turned out great. I then divided the batter, added about two tablespoons of cocoa powder to one, and layered it to make orange/cocoa cupcakes. Thanks for the great recipe!

Honey Baked Chicken II

Reviewed: May 25, 2007
One of the best chicken recipes I've ever had! It was incredibly flavourful and the leftover sauce was perfect for serving with rice. I also halved the butter and I added garlic, cayenne pepper, some dried pepper flakes, and a splash of soy sauce. Thanks for a great dish!

Potato Salmon Patties

Reviewed: Jan. 20, 2007
These were wonderful! Crispy and flavourful and perfect with rice. I didn't have any celery salt on hand, so I left that out, and I added red pepper flakes, dried parsley, green onion, Italian seasoning, cayenne pepper and just a little more of the mashed potato flakes. I also made a simple mayo-based sauce of cayenne pepper, dried parsley, dill weed, and salt and pepper.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Jan. 21, 2007
Delicious and incredibly easy to make. I added hot sauce, red pepper flakes, and garlic, and used chicken drumsticks (as it was what I had on hand). Will definitely make it again.

Peach Cobbler VI

Reviewed: Jan. 6, 2007
I loved this recipe! It was my first attempt at a cobbler (and my first time eating one, too), and it turned out wonderfully. I used the full can of peaches (conserving half of the juice), and about two cups of fresh cranberries. I served it hot with vanilla ice cream. Thank you, I'll definitely be making this one again!

Pumpkin Cream Cheese Muffins

Reviewed: Oct. 12, 2006
I tried this today (the first time I attempted to bake from scratch) and they turned out FABULOUS! I just loved them to death and my family did, too. Next time I think I will be using a little less sugar though, maybe a third less than the recipe calls for. And when I was using the cream cheese filling, I sort of sandwiched it between to globs of batter. Thanks for the great recipe, I'll definitely be doingthis again!

Beer Butt Chicken

Reviewed: Jul. 16, 2004
This was definitely a five star recipe! The skin was crispy and the meat was juicy and flavourful, it positively just fell off the bones, yum! I also made some minor changes: I added some Italian seasoning to the basting mixture as well as the seasoning in the can, and I pushed some fresh herbs (thyme, sage, and rosemary) underneath the skin of the chicken. I also found that it only took about two hours to cook thoroughly, as opposed to three. Thanks, Barrie, for the fabulous recipe! :)
