Braised Chicken and Artichoke Hearts with Lemon, Cherry Peppers and Thyme

This is a tasty recipe that's great to use up leftover rotisserie chicken from the grocery store deli. I made broth from the bones and used all the leftover chicken for the dish. It's just my wife and I, so we had plenty of chicken left. We have Hungarian hot wax peppers growing in the garden so used those instead of cherry peppers. Other than that, followed the recipe pretty closely and it turned out great! Definitely keeping this recipe.

Key Lime Pie VII

This pie is wonderful! My family and coworkers have all told me it's the best key lime pie they have had. Condensed milk comes in 14 oz cans. 2 cans = 28 oz. Recipe calls for 3 cups. 1 cup = 8 oz; 3 cups = 24 oz. The four extra ounces are fine in this recipe. Just pour in the two cans and it will turn out great. Don't worry if you have key limes or not. The biggest difference between them and just a regular lime is size. Normal limes are much easier to juice and zest. The flavor difference between the two types of limes is not much. They are limes, they will all be very acidic and limey! You will, however, notice a difference if you decide to use pre-bottled lime juice over freshly squeezed lime juice!

Stuffed Cabbage Rolls

We loved these cabbage rolls! We did make a few adjustments, though. First, we used ground lamb instead of beef. For the meat mixture we added in 1/2 cup of tomato sauce instead of tomato soup. For the sauce mixture we followed the "most helpful positive review" and instead of using tomato soup we used 1 tbsp lemon juice, 1 tbsp brown sugar, 8 oz tomato sauce, and 1 tbsp Worcestershire. It was delicious!

Spaghetti Squash Primavera

This was amazing! My wife and I loved it so much we decided to grow spaghetti squash in our garden next year so we can cook this all the time. It was very easy to make and tastes/smells delicious.
