I am a full time working mother with a toddler and a spouse who works long hours. Prior to having a child, I cooked very 'fresh' things. Not always low-fat or low calorie but always using fresh and nonprocessed ingredients where able. With a a toddler, I am working to find the balance of fresh, QUICK and child friendly. Not so easy to do!

Zesty Slow Cooker Chicken Barbecue
Excellent. Made it organic and gluten free perfection for a small family. Here's how:
Used 6 boneless skinless organic chicken thighs for more flavor
2 boneless skinless organic breasts
Made my own italian dressing using Good Seasons Italian Dressing packet
Bullseye Original dressing
Dark meat was awesome and it was a total bonus that my family, who can eat gluten, loved it and I, who cannot, could enjoy a tasty gluten free meal as Bullseye Original and Good Seasons are gluten free.

To Die For Blueberry Muffins
These were very good but as someone who has been trying to diversify my grains (and decrease my overall intake of gluten), my taste buds just tasted white flour. I may try these again with a blend of flours and perhaps some oats to see if these can have a richer grain taste and less of the traditional white flour/butter/white sugar taste. Overall, pretty good though and family enjoyed them.

Patti's Mussels a la Mariniere
These were good but didn't wow me. Be sure to let the mussels soak for more than 20 minutes as ours were still gritty.
