High Temperature Eye-of-Round Roast
This was perfection in my oven. Though it was done in 65 min (3.8 lbs) . Thank goodness I had had preset my thermometer for 145 deg. I keep my pizza stone in it and had used the oven earlier in the afternoon so it still retained some heat which roasted this a bit quicker. Will definitely be a repeat for cooking roasts. Thank you for sharing this recipe.

Enchiladas Suizas
This is excellent. I didn't have green chile's so left them out. I lessen the salt to 1/2 tsp. (could be cut back even more). Omitted the frying in oil step, Just continued the recipe from that point. Had leftover chicken that had been marinated in italian dressing and grilled, so I used that. I live down in the Houston area and this recipe is right up there with the great Mexican restaurants down here. Thanks again for sharing such a great recipe!!

Restaurant Style Chicken Nachos
Excellent nachos! I used chicken tenderloins, browned them in olive oil, sprinkled with lime juice. Only used 1/2 c. salsa. Sliced the browned tenderloins in small pieces. Made one batch with Mission Cheese sauce. Second batch as above. Also, sprinkled finely chopped lettuce all over. Didn't last long in my house!!
