Peanut Noodles

With some tweakng, this is one of my favorite recipes. I double the peanut butter and red pepper flakes, and usually add more water to thin the sauce. Also, I usually saute a bag of frozen vegetables--one with broccoli, peppers, water chesnuts, and sugarsnap peas, and toss that in at the end. It is delicious, and even better for lunch the next day.

Bourbon Chicken

After reading previous reviews, I changed the method of preparation a little. I was only cooking for two, so I used two boneless, skinless chicken breasts. I cut them into bite-size pieces and marinated them for only one hour. Then I tossed the whole thing on a frying pan and cooked it until the chicken was done and the sauce had thickened. I served it over buttered egg noodles with peas. I thought it was really delicious and almost exactly like the mall stuff. My bf liked it at first, then only finished half of it, saying that the alcohol taste was too strong. I will make it again, but try using half as much alcohol. I thought it was great.

Sour Cream Chicken

I hate to bash the ideas of others, but I made this last night, and I found it to be really gross. I followed the recipe exactly, and it basically tasted like cream of chicken soup gone wrong. I couldn't finish eating it. I would not recommend this recipe.

Authentic Thousand Island Dressing

My bf made a concerned face when he saw that my homemade version of his favorite dressing was not orange. But he freaked out after he tasted it, and now he wants me to make it all the time, and he is constantly eating salads drowned in this stuff as snacks. Maybe I should make my next batch with light mayo! :)

Applesauce Noodle Kugel

This was my first try at kugel, and it turned out perfectly. It was very easy and delicious. It also kept well in the fridge for a few days as we finished it. I will definitely make it again.

Awesome and Easy Creamy Corn Casserole

I made this last night, and between my two roommates and I, it is gone. I baked it in a 9x13 for 35 minutes and it came out well. Also, I had all the ingredients on hand except for the butter, so I did substitute margerine for it. It still tasted really good, but would probably be better with real butter. You can definitely taste the margerine. I would make this again, even if I had to use margerine again. It was really easy and tastes good warm or cold.

Jewish Apple Cake II

This is so easy and delicious! I halved the recipe and baked it in an 8x8 pan for 45 minutes. I also eliminated fat by subbing homemade applesauce for the oil and egg whites for the eggs. This is my new go-to recipe for apple season!

Baked Tortilla Chips

I didn't have a mister, so I put the oil mixture on a plate and sort of bathed the tortillas before quartering them with scissors and laying them on the baking sheet. I think they were better(though fattier) this way, because the ones toward the end of the batch were not nearly as good as the ones from the beginning, because they got much less oil on them. Also, the spice mix was very good, but next time, I may try plain salt on them. Thanks for the recipe--I have a freezer full of corn tortillas that are going to get "the treatment!"

Mom's Mustard Style Potato Salad

I liked that I had everything for this recipe on hand, but, other than that, it was not great. It was too mustardy, and pretty dry. I added extra Miracle Whip, which made it a little better, but I still wouldn't make it again.

White Chip Chocolate Cookies

These exceeded my expectations! I followed the recipe, except that I used 1/2 cup brown sugar and 1 cup white sugar in place of the 2 full cups of white sugar. The cookies came out crisp, yet chewy and very delicious.

Upside-Down Peach Muffins

Lentil Soup

I made this soup as written, except that I omitted the spinach and added four diced potatoes. Also, you should know that the type of vinegar you use is crucial. USE BALSAMIC. It makes the soup phenomenal. I know it sounds silly to think that two tablespoons of vinegar could make or break an entire pot of soup, but its true. Taste the soup right before you add the balsamic and you'll see what I mean. It takes the soup from standard to extraordinary.

Downeast Maine Pumpkin Bread

Very delicious! Next time, I'll probably throw in some walnuts. The level of spice makes the bread taste a lot like pumpkin pie. Easy, too!
