Quick and Easy Brownies

These were good and super easy. I added some chocolate chips to ensure that they were chocolatey enough, and they did have to bake for about ten minutes longer than the recipe states. But I'll make them again the next time I need a chocolate fix.

Homemade Crispy Seasoned French Fries

These were good, though mine were not very crispy. I am a fairly inexperienced fryer, though, so that may be the problem. I reheated the leftover ones with some shredded cheddar the next day, then I promptly inhaled them. ;)

Baked Tortilla Chips

I didn't have a mister, so I put the oil mixture on a plate and sort of bathed the tortillas before quartering them with scissors and laying them on the baking sheet. I think they were better(though fattier) this way, because the ones toward the end of the batch were not nearly as good as the ones from the beginning, because they got much less oil on them. Also, the spice mix was very good, but next time, I may try plain salt on them. Thanks for the recipe--I have a freezer full of corn tortillas that are going to get "the treatment!"

Fresh Southern Peach Cobbler

This was very good, and was just as easy and good as the recipe promises. I give it four stars only because I prefer oatmeal or granola in my crisp, but this is a very good alternative. And it is not too much cinnamon.

Chewy Peanut Butter Cookies

These were fine, but I would try a different recipe next time. The flavor didn't knock my socks off, and they were a little dry. But I liked that they used shortening instead of butter or margerine, because I was all out.

Grilled Garlic Potatoes

These were really good. I made my bf's the regular way and used Pam and no cheese on mine to reduce the fat, and both turned out really yummy. Its so easy and cheap, I'll definitely make them again.

Chewy Granola Bars

I used 1 cup of honey and 1.5 sticks of butter and stored them individually wrapped in the freezer, as suggested. They were really good. Actually, too good. They are sort of wreaking havoc on my diet...but I'll make them again after a while.

Authentic Thousand Island Dressing

My bf made a concerned face when he saw that my homemade version of his favorite dressing was not orange. But he freaked out after he tasted it, and now he wants me to make it all the time, and he is constantly eating salads drowned in this stuff as snacks. Maybe I should make my next batch with light mayo! :)

Rich and Delicious Banana Bread

I desperately need to go to the store, but I wanted to make something with the two brown bananas I had. Being out of butter and eggs, my hopes for a good dessert were not very high. But I found this recipe and made it last night, substituting half a cup of milk for the third banana. I was very pleasantly surprised! It is just as rich and dense as any banana bread that I've had. I would make it again, bare cupboards or not.

Chicken Piccata II

This was good. I served it over plain basmati rice. The flavor wasn't as complex as the chicken piccata I've had in restaurants, but I am guessing that is because there was no white wine or capers. I liked it, though, and I love recipes where I have everything on hand already.

Mom's Mustard Style Potato Salad

I liked that I had everything for this recipe on hand, but, other than that, it was not great. It was too mustardy, and pretty dry. I added extra Miracle Whip, which made it a little better, but I still wouldn't make it again.

Hummus I

This was very close to the hummus at my favorite restaurant. I did double the lemon juice and garlic, however. I think next time I may reduce the amount of tahini a little, just because it was a tad thick, and all the fat comes from the tahini anyway. But overall, it was really great.

This was easy and good. I thought I would have a problem with waiting an hour for it to rise, but it took me that long to cut up all the toppings! I will make this again for sure--it is scores better than the Jiffy mix that I normally use.
