About this Cook
I acquired a passion for cooking in my early 20's (1990). My involvement as a cook meant working with new chef's right out of culinary school. Restaurants like Outback Steakhouse, Texas Land and Cattle Steakhouse, Pappasito's Mexican Food and a couple of others, began my culinary journey. I am currently attending Le Cordon Bleu Institute of Culinary Arts and will graduate in 2012.
My favorite things to cook
Tex-Mex is my favorite type of food. There are many fasets of Tex-Mex style cooking like grilling, slow roasting and flash searing. I also really enjoy Asian cooking. I cooked Chinese Fast Food for a small restaurant for a few years and definately earned a passion for all types of Asian influences.
My favorite family cooking traditions
My favorite traditional family cooking events are definately: Memorial Day, July 4th and Labor Day Grill-Outs. Slow smoked Prime Rib, Pork Roasts, Buffalo Burgers and many other classic favorites with all the homemade fixings. Fresh Basil mayo, homemade flour tortillas or homemade pickled serrano peppers to name a few.

My cooking triumphs inclde quite a few Friends and Family cookouts that turned out very well.

Neiman Marcus Chocolate Chip Cookie
I doubled this recipe making about 5 dozen cookies. I took all the cookies to Culinary School and everyone ate them up! Excellent as is with no modifications.
