Banana Cream Pie I

This was my first attempt at a cream pie and it turned out fabulously! I followed the directions exactly for the filling and thought it was delicious! (Note: We usually drink skim, but I purposefully bought 2% because some of the other reviews said it helped the filling to be more creamy.) The only things I did differently were to use a pre-made graham cracker crust (because they were on sale) and I whipped up the leftover egg whites with some sugar to make a meringue to put on top. I then baked it for about 12 minutes in a 350 degree oven to brown the meringue. My husband and I both loved the pie and couldn't wait the 3 hours for it to chill before trying a slice. It was great! The only thing I think I'd change is maybe using whipped cream instead of the meringue for more creamy flavor, but that's just because I've never really loved meringue as much as whipped cream (who could!) I will be making this again...and again...and again!

Fluffy Pancakes

Warning: Halving the recipe only yields about six 4" pancakes. I figured the whole recipe would be too much for two adults, but I think it would have been about perfect. That said, these were very good. Very light, fluffy and flavorful. MUCH better than the box mixes and right up there with breakfast restaurant quality! Next time I'll try adding some vanilla or cinnamon!

Best Chocolate Chip Cookies

Great cookies! The only thing I subbed (because I didn't have them and my husband hates them) is the walnuts. I just used oats. One note--I used a scoop and 10 minutes wasn't long enough. 12-13 minutes seemed to be perfect. These were both tasty and pretty.

I followed the recipe exactly and they were just ok. The marinade smelled great, but it just didn't have much flavor. I won't make this again.

Apple Butter Pork Loin

Simple and delicious. I put a 2lb pork loin roast in a slow cooker for 6-8 hours on low. I also slice an apple into quarters, remove the seeds and lay them on top of the roast to help keep the top from drying out while cooking. My hubby and I both love this and it's easy to throw together in the morning before I leave for work. Great flavor!
