I love to laugh and I love to make others around me laugh. I am a wife and a mother with two beautiful boys that keeps me busy. The older one is the food expert, he will always honestly tell me if the food is good or not.
My favorite things to cook
Cookies, cakes, anything with pasta or rice.
My cooking triumphs
Cheesecake. I tried and tried to make the perfect cheesecake and it always either had a crack, too dry or undercooked. I wouldn't give up, I read everything I could and I asked other people on their technique. Finally, I found one that works for me. Now everyone ask for my cheesecakes.
My cooking tragedies
I remember I was fifteen and I found this recipe in the library on rice pudding. I took it home and tried to make it. It was the most disgusting cinnamon flavored mush I have ever tasted. Now when I look at rice pudding I always think of that time. I can't eat it now because of that.

Zucchini Herb Casserole
I like this as an alternative to just plain rice. I cooked my rice in chicken broth and added a little bit of salt and pepper after tasting it once I combined everything. Also, I did not have cheddar cheese on hand so I used what I had which was an Italian Cheese Blend. I will make this again with the cheddar cheese.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles
This was very good. I had left over pork and I could not figure out what to do with it until I came across this recipe. The modifications I made was that I used a bag of broccoli slaw and added red bell peppers to it and ramen noodles instead of chinese noodles. Very tasty.

Pat's Baked Beans
I was skeptical about making this for my 4th of July cookout but I am glad I did. I made a few changes to this recipe, I replaced the garbanzo beans with black beans instead of bacon(my husbancd does not eat pork)I used ground turkey. Threw everything in a slow cooker and cooked on low for about 6 hours. There was nothing left!!! This will be my go to baked beans recipe from now on.
