Pineapple Fried Rice II
Just finished making this ... 2nd time. My grandson who is 16 requested it. I make a few changes... I use chicken, fresh garlic and ginger , no salt. I use pineapple juice instead of sugar and mixed veggies. I didn't measure the soy sauce .. I just sprinkled it on and stirred until the rice was coated. The first time I cooled the rice but this time I didn't and it didn't seem to make a difference. The recipe still deserves a 5 star rating because the basic recipe is a good starter for anyone and then you can tweak it to your own preferences. BTW.. my granddaughter stopped after work and ate some and is now requesting I make a double batch next time. Did I mention she took some home for her lunch tomorrow?

Hamburger Potato Casserole
I wanted something simple and different to make with ground beef and found this recipe. ... I added 3 cloves of garlic which I sauteed with the burger and onion. I then added the soup, milk and pepper (I usually never add salt , plus the soup already had enough salt in it ) along with a frozen veggie mix (carrots,peas,limas, beans, corn) and simmered for a few minutes before layering in the casserole dish with the potatoes (I was fortunate to have fresh dug potatoes from my brother's garden). I did as someone else suggested and covered with foil until the last 15 minutes of cooking time and the potatoes were done just right. I used the cheese I had on hand... Monterrey Jack... which I shredded and sprinkled on top after the casserole was done baking , replaced the foil, and left it melt from the heat of the casserole. I had my brother and his wife over for dinner and everyone absolutely loved this ~~ I kicked mine up a notch and topped it off with fresh diced jalepeno pepper!! Thanks for the great recipe ... I will definitely be making this again!!
