Golden Pecan Pie

This was terrible. I followed the directions exactly, and by 40 minutes it was very golden brown (nearing burning) so I took it out. It was overdone cake-like and dry on the outer two inches, and the inner part (about 4 inches across) was gooey, uncooked and gross. I'd suggest less flour, only baking it at 325 and for a while longer... Or just find a better recipe altogether. It was a Thanksgiving embarrassing moment to cut into that lovely golden top to find such disappointment underneath.

Turkey Brine

Creamy Rice Pudding

I made this with long-grain rice and it was awesome. Thank you! I've flubbed rice pudding many times before and this was the last recipe I'll ever try. It's a keeper.

Cajun Crawfish and Shrimp Etouffe

My hubby worked in Baton Rouge 14 years ago, and has ever since raved about the Crawfish Etouffee. I've tried making it a few times before and it was never "right" (I used the recipes calling for cream of mushroom soup. :P) This one nailed it! I made it for his birthday today and he was THRILLED. I posted a picture. We served it over rice, and I will say it was spicy!

Biscotti

Amazing biscotti gets 6 stars for flavor and one deducted for being a tad crumbly when slicing. Also, I used 1/2 tsp ground anise seed and it was fine. Since the batch is divided, I knead cranberries into one half of the batch, and then drizzle the finaly product with white chocolate and sprinkle with almond slivers. The other half I knead in choc chips and toffee bits. YUM!

Ramen Cabbage Salad

This was great! For extra flavor, I used apple cider vinegar instead of white, and stirred in a can of cold chuncked chicken, and craisins. We used almond slivers instead of sesame seeds. All of kids ate it up. (I have four kids ages 7 down to 1)

Zucchini Pie

I added fresh garlic and green peppers and used pancake mix instead of bisquick. I also made this up the night before and just put it from fridge to the oven this morning, and it baked up in about 35 minutes. It was a hit for my sunday school class brunch. Only one slice left, and I was even asked for the recipe. I will make this one again. :)

Fabulous Zucchini Grinders

I made this one with some ground sausage and used hamburger rolls, for a more casual lunch. My family loved it and everyone stuffed themselves. I was amazed how easy it was to get them to eat zucchini this way. :)

Bread Machine Garlic Bread

I read the comments and added extra butter for moistness and used two cloves of real garlic instead of the powder. (Tip - put saran wrap over grater before grating garlic cloves for less waste.) It turned out small and fairly crusty, but it could have been due to my lack of experience with my bread machine. The inside of the loaf was light and moist. The flavor was good but not very garlic-y, which makes me think I'd use 3 cloves of garlic next time.

Dog Treats I

My dog loves em. This one was recommended to me by a friend, and she suggested omitting the cheese and bouillon and adding 1 cup peanut butter. Makes for a better dough too. :)

Hot Pepper Jelly

Turned out great. I highly recommend rinsing the peppers before chopping and I used a food processor for a really fine chop (ok, I turned them to mush!). Also I varied the recipe by using a low-sugar pectin, so it set up better.

Mini Meatloaves

Very simple, you can't mess it up. I've made this one over and over and over again and am always pleased with how it turns out. It's my hubby's favorite meal. (What is it about guys and meatloaf?) I think the best part is the glaze, and the individual loaves makes it nice that you don't have to slice it.

Original Nestle® Toll House® Chocolate Chip Cookies

I've always made my cookies with this recipe and they've always been great. My trick is I pull them out when the edges are light brown and centers are still soft, and then I let them cool right on the pan, they stay soft much longer this way... Especially if you keep them in something air tight. I recently tried this recipe with SPLENDA, tasted great still but a more crumbly cookie. I also found that the splenda made the dough less likely to melt out flat on the pan, so I had to roll the cookie balls in my hand and press them onto the pan to make them look nice after baking.

Tofu Chocolate Pudding
