Slow Cooker Beef Round Stew

I made this for my husband and myself a couple of weeks ago. I took a photo and uploaded it but forgot to post a review. I used a frozen bag of mixed vegetables, added some minced fresh garlic, and used the optional cream of mushroom soup. I thought it was good but just felt like it was lacking something. My husband didn't like it at all. He said it was very bland. I think it was because of the brown gravy mix. Next time I'll try it with beefy onion soup mix and water instead of the beef broth and gravy mix. I'll also thaw the frozen vegetables and add them at the end so they don't get mushy and washed out looking.

Buffalo Chicken Dip

If I could give this dip more stars I would. I have been asked to make this so many times. I am not a fan of canned chicken so I poach a couple chicken breasts and shred them and I use Frank's Buffalo Wing sauce. I can't imagine using any other pepper sauce as it might be too hot (especially something like Tabasco sauce). I also like to layer the ranch and cream cheese on the bottom and then top it off with the chicken mixture. I top it all off with the shredded cheese if I have some in the fridge otherwise no one really misses it. We had one occasion where we had a little bit left over so the next day I made a grilled buffalo chicken dip cheese sandwich with sourdough. It was so good.

Super-Delicious Zuppa Toscana

This was so yummy and really easy to make. I had to use half and half because I didn't have any heavy cream but it was still delicious. The only thing I didn't like was that the bacon became kind of soggy and rubbery but I think that was because I didn't cook the bacon until it was extra crispy. I had sliced up 6 potatoes but ended up only using about 4 because there was not enough broth to boil all 6 potatoes.

Sesame Pasta Chicken Salad

I've made this a couple of times and it's really good. I brought it to a family pot luck and it was gone pretty quickly. The first time I made it I followed the recipe but it was pretty oily and it needed more dressing and flavor. The second time I made it I doubled the ingredients for the dressing but left the amount of oil at a 1/2 cup and the sugar at 3 tablespoons. I also toasted the sesame seeds. It was perfect. I also added some snow peas, napa cabbage, and red bell pepper. It was delicious. This one is definitely a keeper.

Best Brownies

Yummy! I absolutely LOVE these brownies. They were so moist and cake-like. I used Callebaut cocoa powder and added milk chocolate chips. I didn't even need the frosting! Thanks for a great recipe.

Pumpkin Cheese Bread II

This was really really good. I read all the reviews and saw that a lot of people used vanilla extract instead of the orange zest. I decided to follow the recipe exactly as written and used the orange zest. I am so glad I did! It added such a wonderful flavor. I think without the orange zest it would have been very bland. It came out of the oven about an hour ago and already half of it is gone and there are only 2 of us eating it.

Best Ever Tuna Salad

This is the ONLY tuna salad I make now. I have followed the recipe as written and it is delicious but I no longer add the crabmeat since no one can really taste it. I just use less mayo. Also, since some people don't really like it too sweet, I will use mostly dill relish and just a touch of sweet pickle relish. A lot of times, I'll make a double batch because it tastes so much better the next day. It's so yummy that I think I'll make it now and have it for lunch.

Jamie's Cranberry Spinach Salad

Wow! This was sooooooo good. I followed the suggestion of others and cut the sugar down to 1/4 cup sugar. It would have been way too sweet if I would have used 1/2 cup of sugar. I also used a minced shallot instead of the 2 teaspoons minced onion for a milder flavor and added feta cheese. My fiance LOVED this salad and he has always refused to ever eat any salad unless it has Ranch dressing on it. I made more of the dressing yesterday so I can use it on other salads too. This is definitely a keeper!!!

I have made this guacamole several times and everyone loves it. It's addicting. People stand around the bowl eating it until it's gone. I do recommend cutting down the salt and using a red onion.

Broiled Tilapia Parmesan

Quick, easy, and absolutely yummy! I have made this at least 10 times and every time I make it I always get compliments. I have tried it using margarine and low fat mayo and it's still tasty! I even tried salmon once and it was delicious!

Carne Con Papas

This was very tasty and fairly easy to make. I served it over steamed rice and my husband really liked it. The Oriental/Filipino market in our area has the Achiote powder. It's called Mama Sita's Annatto All-Natural Food Color. I read the other reviews and cut the water down to two cups and I added the potatoes towards the end and cooked it another 5 minutes in the pressure cooker. It still had a lot of liquid left so I think next time I'll cut it down to 1 1/2 cups water instead of 4.

Brown Sugar Meatloaf

This recipe was fabulous!!!! Instead of spreading the ketchup and brown sugar on the bottom of the pan I mixed them together and used it as a glaze on top of the loaf and it came out beautifully. I won't be using any other meatloaf recipe again!
