Last 5 years I've been cooking for a UMVIM hurrincane Katrina recovery missions. I grew up having to cook due to mothers health at the time, father's work kept him busy. I've been blessed to have the chance to pursue a passion
My favorite things to cook
I like to blend cajun/creole with mix of southern or southwest recipes. Cooking for a volunteer group means having to adapt what's on hand. I like to twist it up a little
My cooking triumphs
One would be cooking for a group from Puerto Rico; tried to emulate their favorite meals, it turned out a success. I consider a meal a success when I am pressed for the recipe.
My cooking tragedies
They are like a bad hangover; I try not to remember them. LOL.

Black-Eyed Pea Gumbo
Great meal;I prepared it for group of about 20 mostly college age folks & they devoured it. I used Conenech smoked sausage

PJ's Sweet Potato Mash
Great recipe! I made it for a group of about 30 and served it for immediate family. I used # 10 cans of Sweet Potato for the large group & it worked great. A added note: Both times I placed leftovers in a glass bowl, refrigerated and later used as a cracker snack(inverting the bowl to serving plate with cracker/chips)

Crazy Chicken Marinade Grilled Chicken
I served 28 guest that loved it. I used concentrate lime juice(for that many servings & a even strength of the taste). I sub'd some of the chili powder for cayenne powder & added Smoked paprika. I marinated boneless thighs 4 hours, coated in fine Italian bread crumps and baked. Plan on doing the grill version @ first chance.
