Fluffy Pancakes

This is an excellent basic pancake recipe...I like to add things to my pancakes and this recipe is the best base! I will sometimes add bananas and walnuts to the mix and other times, I'll add 1 tsp. cinnamon and diced up apples.

Crazy Cake

I LOVED this cake and that it doesn't use eggs or dairy. Some other readers didn't like this cake and said it has a weird odor, but I disagree. I did read through others' suggestions and added a 1/4 cup cocoa powder and mixed everything separately in a bowl. I also sprayed my pan with cooking spray. For my own taste, I substituted liquid stevia for half of the sugar used in this recipe. My husband and I both agreed that this is our new chocolate cake recipe!

Sweet and Sour Sauce I

I really liked this recipe because it was super easy and can be made with household items that I always have on hand. I think it could have been just a little bit thicker and I'm wondering if mixing the cornstarch with 1/3 of the cup of water and waiting until the other ingredients come to a boil before adding would help. I might try this next time. Otherwise, a great overall recipe!

Pumpkin Pancakes

These were awesome! I am avoiding eating milk and eggs lately so I subbed 1 3/4 cups of Silk for the milk and half a banana in place of the egg. Nobody complained about these and I love that they barely have any sugar in them!

Butternut Squash Pizzas with Rosemary

This recipe was VERY good as is and the only thing we added was some crushed red pepper, about 1/2 tsp. We like a little spice and I think it was a great improvement. This is a great pizza for me since I'm vegetarian and I think next time I'll add a base sauce of cream cheese mixed with veggie stock and garlic.

Barbecue Tofu Sandwiches

These were so much better than I expected and is the closest thing to a barbecue sandwich that I have come by (being vegetarian). I followed the directions exactly except for adding some BBQ rub to the patties before cooking. I topped each sandwich with lettuce, tomatoes, fresh onion and mustard.

Tofu Tacos I

The seasoning was perfect in this recipe! I did change a couple things because of what I had on hand but these still turned out amazing. I omitted the tomato sauce and tomatoes and just used salsa in place.

Perfect Apple Pie

This was a great classic apple pie recipe if you're in a rush. I used granny smith apples for more of a sweet tartness. I also changed the sugar combination slightly. I subbed 1/4 cup of brown sugar for 1/4 cup of the white sugar. After putting the top crust in place, I brushed a slightly beaten egg white over the top and sprinkled with 2 tsp. of sugar. Everyone LOVED this pie and I will be making it again for Thanksgiving.

Triple Dipped Fried Chicken

Singapore Noodle Curry Shrimp

This was pretty good but didn't seem to have any unique flavor...I followed another reviewers suggestions and doubled the curry and added cayenne pepper. I didn't have the oyster sauce either time but didn't miss it. When sauteing the veggies I also added a little crushed red pepper for more kick! My husband went back for seconds.

Coconut Shrimp I

These were AWESOME! For the sauce, I used a mixture of orange marmalade, habanero jelly and a little bit of habanero hot sauce. It was absolutely delicious!

Mom's Cucumber Salad

This recipe is just like the cucumber salad my grandmother used to make with a couple little alterations...I used a little less than half the sugar and cut the mayo down to 3/4 cup. I substituted fat free mayo for the regular mayonaise and used sea salt instead of the seasoned salt. The result is fantastic and the fat free mayo really tames down the fat content! I also chilled the cucumbers beforehand so that everything could be served immediately.

Insane Oven Beef Ribs

I started making this and realized that it just wouldn't have enough pizazz for me and my boyfriend's spicy taste. I made it as is with a little less olive oil, about 5-10 shakes of tobasco sauce, 1/2-3/4 cup of Famous Dave's Devil Spit BBQ sauce and a little chili powder. With the few modifications, it was excellent for me!
