Rotisserie Chicken

Reviewed: Jan. 13, 2011
Best rotisserie chicken I've ever made...this is one of our favorite things to eat. I put less paprika than the recipe called for (maybe about 1/2) because I didn't know if my husband likes paprika. I also added a few dashes of garlic salt. I melted all the seasonings together in a pan on the stovetop and rolled the chicken around in it after it cooked for 10 mins. The seasoning was really good....has kind of a salty tangy-ness. We will definitely make this again. UPDATE: I always make this in my toaster oven (it has a rotisserie attachment) and it's perfect. Sometimes I alternate seasonings with the "Roast sticky chicken" recipe by Sue Rogers, on this website, for some variety, and stick a lemon in the middle. Cooking chicken this way is the best!

Ricotta Gnocchi

Reviewed: Jul. 23, 2011
This was delicious! Thank you so much for the recipe. I was confused by other reviewers who said they changed the recipe by boiling the gnocchi...but that is what the recipe asks you to do. I didn't change any of the ingredients, but I did make more sauce than called for, because we love sauce. This was a great change from our usual pasta staples. It's very filling.

Orzo and Chicken Stuffed Peppers

Reviewed: Dec. 4, 2012
We really liked this. I gave it 4 stars because the peppers were undercooked. I would advise boiling the peppers for 5 minutes instead of baking them for 10.

Sarah's Applesauce

Reviewed: May 6, 2012
This is sooooo good. Made 2.5 times the original amount, and I just ate way too much in one sitting. It's such a pain to peel all those apples, and I feel like you lose a lot of good apple, so I just cored them, cut them in quarters, and cooked them that way. Once it cooled, I used my hands to squeeze the peels away from the apples. That worked pretty well.

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 26, 2011
The best thing about this bread is the crust. Others mentioned sprinkling brown sugar over the top when they baste it, and that does make it taste better, but it makes it more of a dessert bread than a dinner bread. I like to put a few dashes of salt in the baste mixture instead....it goes with the sweet-ish taste of the bread really well and tastes like a nice dinner bread. This recipe made two large loaves for me, so next time I will half it. I made one loaf and refrigerated the rest for 2 days, and the dough changed. It was not very good. I would recommend making whatever amount you need at once and not saving any.

Mediterranean Black Olive Bread

Reviewed: May 2, 2012
I make this bread all the time in a loaf pan, and we use it as sandwich bread. It's delicious, but the original recipe is slightly plainer than we wanted, so I added 1/4 tsp each of oregano, thyme, rosemary, and sage. I use a 2/3 cup olives and 1/3 cup bell peppers (if you do this cut the water as needed). I also add a little coarse (pretzel) salt to the top after shaping. Lastly, I've ended up with a yeasty taste if I let it rise so many times, so now I let it double once, knead again and shape, and then just let it rise a bit while the oven is preheating. We make sandwiches with turkey breast and spicy pepperoni cream cheese. Weird maybe, but awesome!

Kocoa Klastch Blend

Reviewed: Dec. 17, 2011
This was just what I was looking for. It's hot chocolate, but with a little bit of extra winter spice. I used less than 2 cups powdered sugar, and honestly I didn't need to add any more. I think adding the full amount of sugar would have made it too sweet.

Rosemary Ranch Chicken Kabobs

Reviewed: Aug. 29, 2011
This chicken was delicious. I used strips of chicken breast and marinated sliced mushrooms as well, and left it all in the fridge for a few hours. I covered the grill with foil and grilled it all, and then put it on small ciabatta loaves with some fresh mozzarella cheese. Then stuck that in the oven until warm and melty. Best paninis ever! This chicken is great for sandwiches. Update: After making this lots of times, we've found we like it best when we omit the lemon juice, vinegar, and sugar.

Glenn's Marinated Pork Shoulder

Reviewed: Aug. 12, 2011
The actual pork roast that I made probably deserved 3 stars instead of 4, but I think if I was able to truly stick to the recipe, it would have been better. I partially grilled it, and cooked it the rest of the time in the oven. I think I had a bit too much juice in the pan, and the meat came out a bit tough. The flavor was good, although my husband doesn't much like sweet sauces. If you like barbeque that is somewhat sweet, you will like this marinade. Not bad, but not the best pork I've made. Thanks for the recipe.

Jay's Signature Pizza Crust

Reviewed: Jun. 16, 2011
This recipe is promising...it was my first homemade pizza crust. I was worried about the dough because I had to add an awful lot of flour to get it to not be sticky, and then after I let it rise it was really sticky again so I added a little more. The recipe said if you're baking it on a pizza stone, you can go ahead and add ingredients and bake the pizza, but I really think I should have prebaked it a little. My pizza was doughy on the bottom. The crust had a good taste, so I will definitely try this one again, and prebake it next time.

Hamburger Steak with Onions and Gravy

Reviewed: Mar. 26, 2011
This was great! The gravy is really the best part. I doubled it, and I still want to make more....it would be good on a lot of things. I think the quality of your ground beef is probably important here. I didn't have cooking sherry or onions so I left those out, and I used regular salt because I don't like seasoned salt. This is a recipe you can mess with to your liking and still have the same basic great thing. I boiled some potatoes in beef broth to go with it. Even my picky husband said this tasted like something you would get at a really good restaurant!

Debdoozie's Blue Ribbon Chili

Reviewed: Mar. 26, 2011
This chili was just what I wanted in chili....nothing funky, nothing I never expected to be in chili....just standard, good chili. It was a little bit spicy for us, but I can never be totally sure how close my version is to the original, because we live in Germany and the ingredients are sometimes a little different, like the chili seasoning. I added a little more tomato sauce, because it was a little bit thick. Next time I will add less chili seasoning. This chili wasn't the best I've ever had, but it was the best I've made and I will make it again. It's perfect for hotdogs!

Avocado Feta Salsa

Reviewed: Feb. 5, 2012
Yum! I bring this to work for lunch, and it's great. I use fresh mozzarella with basil in it instead of feta cheese. Bring some nuts along and you've got a nice, healthy, well-balanced lunch.

Ranch Burgers

Reviewed: Oct. 21, 2011
These were excellent. I used bread crumbs instead of saltines because I can't get them where I live (I know, right??). I didn't have nice fresh, soft buns so I decided to make mini burgers and put them on refrigerator biscuits. I topped them with bacon and gouda cheese. Awesome! Will definitely make again.

Lemon Cream Pasta with Chicken

Reviewed: Jun. 19, 2011
I thought this was delicious, but you REALLY have to be in the mood for lemon. My husband wasn't a big fan of the strong lemon taste. I would make this again, but I would leave out most of the lemon juice and just squeeze it over the chicken. I don't think it would be bland because the chicken is seasoned really nicely. I added sliced mushrooms for a veggie. Thanks for the recipe! UPDATE: After a few tweaks, this is now my husband's favorite recipe! I leave out all of the lemon except squeezing some on the chicken, and I add quartered mushrooms and a cube of frozen spinach. This is a great way to get in some veggies without having conflicting tastes.

Chocolate Cobbler

Reviewed: Apr. 28, 2011
What I actually made deserved far less than 4 stars, but it's my fault. I feel so stupid for not paying attention to the "self rising" part of the flour (doh!). For anyone who doesn't realize how important this is, you will have a greasy runny chocolate mess instead of a chocolate cobbler! That said, the taste was good and I'd like to make it again sometime, correctly.

Quick and Easy Alfredo Sauce

Reviewed: Apr. 28, 2011
This was really good! I think like anything with parmesan cheese, the quality of your cheese will really make a difference in the flavor. I made more sauce than I needed in one night so I saved the rest, and I had a lot of difficulty getting the consistency back when I went to use it again...that's the only downside.

Super-Delicious Zuppa Toscana

Reviewed: Sep. 7, 2012
This was soooooo good. There was just one bad thing....the peppercorns, if they're not totally ground up, taste REALLY bad. Unless you can grind them really small, I'd just leave it out. Other than that, 10 stars for this recipe. One suggestion for ease, consider using frozen prepared meatballs to cut out the extra meat cooking step.

Best Chicken Pasta Salad

Reviewed: Mar. 21, 2012
I think this recipe is very good, but has way too much dressing for my taste. I made it as-is, and the ranchy-ness gave it too much mayo taste, which covered up the other ingredients. I will make this again, and either cut the ranch totally out and just have the steak sauce, or replace the ranch and steak sauce with some balsamic vinegar.

Banana Crumb Muffins

Reviewed: Aug. 28, 2011
YUUUUUUUUUUMMMM!!!! I had a tried and true, go-to banana muffin recipe using Bisquick for years. Then, we moved to Germany and you can't find it! It was a blessing in disguise...this recipe is way better. The first time I made it I skipped the crumbles on top....don't do that. Making the crumble is easiest when you just use your fingers, fyi. Also, use good quality butter. It makes a difference.
