Banana Sour Cream Bread

This is a great banana bread recipe that lended itself easily healthy substitutions. I halved the recipe and substituted: 1. 1/4 cup unsweetened applesauce and 2 tbsp butter instead of all butter 2. 8 ounces Chobani Greek yogurt instead of sour cream And I opted not to sprinkle additional sugar... It has plenty already. I baked four 7x3" loaves on 300f for one hour.

Orzo and Chicken Stuffed Peppers

We really liked this. I gave it 4 stars because the peppers were undercooked. I would advise boiling the peppers for 5 minutes instead of baking them for 10.

Super-Delicious Zuppa Toscana

This was soooooo good. There was just one bad thing....the peppercorns, if they're not totally ground up, taste REALLY bad. Unless you can grind them really small, I'd just leave it out. Other than that, 10 stars for this recipe. One suggestion for ease, consider using frozen prepared meatballs to cut out the extra meat cooking step.

Quinoa and Black Beans

I like this! I do love black beans and rice more I think, but this is healthier so I can make the switch. It was too spicy for me. I will take the cayenne down a notch next time. I grilled some chicken to go with it.

Grilled Pineapple Slices

These were awesome! I did change a couple things....for convenience, I used 2 cans of sliced pineapple, drained them, and soaked them in a whole can of coconut milk the day before. I mixed about 3 tbsp honey into the coconut milk and omitted all of the sugar (healthier and diabetes friendly), and just gave 4 or 5 good shakes of cinnamon. So easy, so good!

Mediterranean Chicken

This was good! Not my favorite way to eat chicken, but it was nice for a change. I would probably try it again with regular black olives rather than kalamata olives....they were a bit too strong for us. I served it over basmati rice.

Stuffed Green Peppers I

This is a great recipe. I've had to make a few adjustments to easily scale it to 2 people: 2 peppers, 1 can tomato soup, 200g ground meat, 1 small chopped red onion, 2tbsp rice, 2 tbsp water, 1/4 cup cheese, and a few squirts worchester sauce. Salt and pepper to taste. Followed all the directions as-is, except I just add the whole can of tomato soup to the meat/rice, and don't worry about pouring it over the top.

Dominican Style Oatmeal

This recipe is the perfect bowl of basic cinnamon oatmeal. To streamline the morning breakfast routine, I separate 2-portion mix into jars and just pour into the pot and add milk in the morning. Every little bit of time saved matters! Thanks for the great, money-saving recipe.

Onion Rice

There's just one big problem....this was WAY too peppery! I thought I had dinner ready and tasted it and couldn't eat it like that....had to add some cream and simmer it a little to thicken it. That helped. Next time half the pepper.

Olive Bread

This is excellent! I like my olive bread nice and herby, so I added 1/4 tsp each of thyme, oregano, and basil. I covered the crust with sesame seeds and a bit of coarse salt. I also added some chopped bell peppers, which meant I needed to cut the water a bit. I would not advise anyone to mix their water first...active dry yeast does not need to be activated, and good bread making technique is to add water a bit at a time until the dough is right. Don't let the water dictate the flour content. Even without the additions, this would be nice tasty bread....thanks for the recipe.

Sarah's Applesauce

This is sooooo good. Made 2.5 times the original amount, and I just ate way too much in one sitting. It's such a pain to peel all those apples, and I feel like you lose a lot of good apple, so I just cored them, cut them in quarters, and cooked them that way. Once it cooled, I used my hands to squeeze the peels away from the apples. That worked pretty well.

Mediterranean Black Olive Bread

I make this bread all the time in a loaf pan, and we use it as sandwich bread. It's delicious, but the original recipe is slightly plainer than we wanted, so I added 1/4 tsp each of oregano, thyme, rosemary, and sage. I use a 2/3 cup olives and 1/3 cup bell peppers (if you do this cut the water as needed). I also add a little coarse (pretzel) salt to the top after shaping. Lastly, I've ended up with a yeasty taste if I let it rise so many times, so now I let it double once, knead again and shape, and then just let it rise a bit while the oven is preheating. We make sandwiches with turkey breast and spicy pepperoni cream cheese. Weird maybe, but awesome!

Taco Seasoning I

It's perfect....just like the packets, but so much cheaper. I multiple the recipe by 4 and keep it in a jar. I use 1 tbs and 1/2 cup of water per pound of ground beef, and I mix in some chopped green onions. This seasoning also works on mexican-inspired chicken or fish.

Chicken Fettuccini Alfredo

This is really good. Definitely use fresh garlic and red onion- it's good for you. I used spinach tagliatelle instead of regular fettuccini, and also added some sliced red green and yellow bell peppers. These changes make it a little more nutricious without changing much of the taste. This recipe would still be good without the pepper jack cheese (keep the parmesan).

Good Old Fashioned Pancakes

This is our recipe for Sunday pancakes. As Americans living in Germany, we cherish our little tastes of home. FYI, I realized half way through that I didn't have baking powder one day, and made it anyway. Just add 1/4 more milk, and you've got delicious crepes!

Best Chicken Pasta Salad

I think this recipe is very good, but has way too much dressing for my taste. I made it as-is, and the ranchy-ness gave it too much mayo taste, which covered up the other ingredients. I will make this again, and either cut the ranch totally out and just have the steak sauce, or replace the ranch and steak sauce with some balsamic vinegar.

Slow Cooker Stuffing

OMG I will never make stuffing out of a box again! I've made delicious stuffing from scratch before, but being able to use the slow cooker saves SO much time and counter space. My husband and I are expats in Germany, and every year we have people from all over the world celebrate Thanksgiving with us. You never know if people will like our traditional food, but I got compliments from an Italian man, a Chinese woman, a Dutch couple, a German couple, and my husband. This dish definitely made me proud last Thanksgiving, so vielen dank for that!

Blueberry Zucchini Bread

I took other reviewers' suggestions and did 1/2 oil and 1/2 applesauce. I also cut the sugar to 1 1/4 cup. These were pretty sweet so I think the original amount would be really excessive. They were great! I made 20 muffins. They taste like blueberry muffins with some extra spices.
