Spicy Southwestern Slaw

Spicy hot, but oh so cool! This is a very good side dish to BBQ, Mexican food, or any grilled meat, such as pork, chicken or fish. This is even good scooped up by a tortilla chip. I like that this slaw has no mayonnaise - the oil really seals in the flavors. I embellished the recipe by reducing the vinegar to 1 TBS and adding the juice of 1 lime. I also added more cilantro (but that's to my taste) and 2 TBS of minced radish. I halted the amount of cayenne pepper and added 1 TSP of cumin powder. As a note, the color of this slaw is beautiful, and if you use a combination of green and purple cabbage, it's even more so.

Kale Orange Banana Smoothie

Like a couple of the other reviewers, I needed a way to incorporate kale into my diet...and this smoothie recipe fits the bill! The banana and orange flavors tame the bitterness of kale, and the end result is a palate-pleasing drink.

Honey Mustard Dressing

This is a good dressing for salad, but my family really enjoyed this on asparagus, too. In fact, I thought it was a healthier complement to the asparagus than my regular choice of Hollandaise sauce. You cannot buy a honey mustard dressing this good.

Avocado, Tomato and Mango Salsa

Delicious! The favors blend together so well. I agree with other reviewers when they say that you can eat this by itself. But, this is also good with grilled chicken or fish. The only thing I changed was that I used a Serrano chile instead of a jalapeƱo, but that is a personal preference of mine, and not a necessary change to the recipe.

Beef Tamales

I decided to finally make tamales for Christmas, and not only were these easy to make, but the meat is one of the best flavored tamale meat i have tasted. I've used this meat recipe for shredded beef enchiladas, too. I need to work on the masa a bit, but that's more of my inexperience than a deficiency in the recipe. As someone else mentioned, tamale making is a group event...it' a lot of work for one person! Also, I put a black olive in the middle of the meat during the assembly process. That is common here in Arizona.

Creamy Rice Pudding

For those of us living in hot climates, this stovetop version is fantastic, because it doesn't heat up the kitchen with a hot oven. I did not make this recipe as written. After reading other reviews, I added more milk (a cup more) and a whole tsp. of vanilla. The texture was rich and creamy - totally delicious! I also want to note that I had no problem using long grain rice, but I do know that shorter grain rices will make starchier rice. I'm saving this is as my go-to rice pudding recipe.

Amish White Bread

This bread is so good...I make this recipe for my family 2 to 3 times a week now! We can't go back to store-bought bread after eating this. I took the suggestions of others and have made the 2nd loaf into cinnamon swirl bread. I've also made rolls using the dough for the second loaf (I just rolled the dough into little balls and placed them on a baking sheet). I'm a novice at baking bread, and I find it easier to add the last cup of flour gradually as I am kneading the dough. This bread looks as "pretty" as store-bought bread, but tastes far superior.

One - Two - Three - Four Cake II

This is my all-time favorite yellow cake recipe! It's moist and delicious. This cake is so tasty that it doesn't need frosting...it's that good! I substituted 1/2 cup Crisco shortening and 1/2 cup butter, rather than a full cup of butter (to save money).

Valentino's Pizza Crust

This makes a fantastic thin crust. I've used another recipe for years, and this one is quicker, easier, and far better tasting! I've made this recipe twice now and my family loves it. I added a little dried oregano and garlic powder to add extra flavor to the crust.

Chocolate Cream Pudding

I've made this pudding twice now, and it has a permanent place in my recipe box! It's simple to make and tastes great. I took other reviewer's advice and tempered the eggs, which gives it a smoother texture. This pudding is delicious either chilled or warmed.
