Unbelievable Spinach Calzones

Good! I added 8 oz sauteed mini bella mushrooms to this and used low fat cottage cheese in place of the ricotta. I also put some turkey pepperoni in some of the calzones. Before baking, brush with olive oil and sprinkle some fresh crushed garlic on top for a delicious garlic flavor!

Black Bean Vegetable Soup

Pan-Fried Asparagus

I made it with about half the butter and no oil, and it was amazing! My asparagus spears were thin and tender and didn't need to cook the whole 10 minutes.

Curried Butternut Squash and Pear Soup

My sister and I loved this recipe! I used acorn squash instead and only 3 1/2 cups chicken broth (2 cans worth). Also, I had coconut milk on hand from another curry recipe, so I used about 1/4 cup of that instead of the half and half. Delicious!

Curry and Peanut Thai Sauce

I just made this for my roommies for dinner and it was amazing! I served it over coconut rice and we all enjoyed it! It looked a little greasy, so I might cut out the butter and/or oil next time since the peanut butter and coconut milk have plenty of fat. This would be great with chicken.
