Corn Souffle

I've made this recipe for a few Thanksgivings and now my family insists I make it every year...it is a favorite side dish in our house now. Love it!!

Blackened Chicken

This was delicious, what a change from dull baked chicken. I only made a few minor changes, I doubled the amount of spice mix which barely coated two large breasts, I used olive oil to coat the chicken instead of a spray and I put it in the oven still in my iron skillet which gave it a crisp spice crust and kept it very moist. This one will be a new regular for my family!

Bacon Mushroom Chicken

I used this recipe as a base to create my own sauce and it turned out wonderfully. I pan sauted my chicken breasts and made the sauce seperately with pancetta bacon, shallots and mushrooms in heavy cream.

Almond-Crusted Tilapia

This was delicious, but I made several changes which is why I only gave it 4 stars. I didn't egg/flour the fish, I seasoned it with garlic, salt & pepper then dipped it directly into the cheese & almond mix. Also used 3 types of cheeses, parmigiano reggiano, pecorino romano and classic parmesan (all freshly grated). I also took the advice of some other posters and used a mixture of butter and EVOO to cook it in. The fish turned out a beautiful crispy golden brown and was delicious.

Japanese Chicken Wings

I made some changes to the recipe to accomodate out diet and to make a bit spicier and it was very excellent! Used splenda instead of white sugar, mixed in some balsamic vinegar to help carmelize and added a little chili paste for spice. Also didn't bread the chicken before frying and it still turned out crispy and delicious!

Teriyaki Tuna Steaks

I've made this recipe a few times for my husband and I and we both LOVE it! I use less brown sugar than the recipe calls for and a bit extra pineapple juice for our low carb diet...but the recipe is great as is if that isn't a concern for you.
