Roasted Vegetables
We really enjoyed this, I used 3 potatoes, golds, white and sweet. A yellow onion, green pepper, zucchini and mushrooms. I did the root vegetables for 30 minutes with 3/4 of the marinade and let the zucchini, mushrooms and green pepper marinate for the 30 minutes in the olive oil, vinegar and 1/4 cup red wine. Stirred all together at the 30 minute mark and cooked another 10 minutes. A perfect meal if you add brown rice !!!
