About this Cook
I am a chorus teacher who loves life! Recently I was diagnosed with a blood clotting disorder and put on a restricted sodium diet by my doctor's. So, I am now constantly trying to find tasty new ways to cook with very low salt.
My favorite things to cook
I love the tasty southern style comfort dishes my mother made for the family while I was growing up. I also love different ethnic foods. Now the trick for me is cooking these things with reduced sodium content.
My favorite family cooking traditions
Making Christmas candies and treats! Baking peach cobbler on the occasional Sunday afternoon. Pork and sauerkraut for good luck in the New Year.
My cooking triumphs
When I make pumpkin bread that even my own mother says is the best she had ever had - better even than her mother's. In my family, that's saying a lot.
My cooking tragedies
Making chili that was so spicy that it was inedible even for the bravest of spice-lovers' taste buds!

Chicken In Basil Cream
Excellent way to use up some whipping cream in my fridge. It was so easy, but had a "fancy" appeal. My husband couldn't get enough, and he thanked me for making such a delicious dinner. I believe he thinks I really worked hard on this, but little does he know just how quick and easy this is!

Campbell's(R) Slow-Cooker Chicken and Dumplings
I followed the recipe as written, except I used torn pieces of canned biscuits for the dumplings because I was running short on time. The taste of the vegetables and 'sauce' was just okay, not enough to make me excited about making this again. I really believe a big part of the problem is the amount of thyme. It was overpowering. Maybe less thyme, and adding something else. I will be looking for other chicken and dumpling recipes to try.

Chicken Crunch
Just like my mom's! YUM! The only change I made was melting the butter and pouring it on top of the crumbled crackers instead of dotting the butter underneath the cracker topping.
