Grammy's Easy Blackberry Cobbler

This is an excellent and easy recipe. I made it exactly as written. My family says its the best cobbler they've ever tasted. This recipe is a keeper. I plan on using this method with other types of fruit. Thanks for an awesome recipe.

Lemon Butter Chicken

Turned out really good. I made this along with steamed veggies. I did marinate the chicken for about 3 hours in the fridge. I don't know if it made a difference though. Next time I will make it without marinating first to see which is better. This recipe is definitely a keeper though. It's so easy to make this for a large dinner. I doubled the recipe and used a 9x13 Pyrex dish and it came out great.

Baked Egg Rolls

My husband absolutely loves these egg rolls and requests them on a regular basis. These are very easy to make. I make my filling up ahead of time so that it has some time to cool just a bit before filling the wraps.

Sugar-Free Peanut Butter Cookies

I've been making these for years. I enjoy using this as a base recipe to which I make small changes. Try adding a teaspoon of extract, whether vanilla, almond, or another flavor. Also, sometimes I add a touch of cocoa powder which really intensifies the peanut butter flavor. Try putting a thumbprint in the top of the cookies before baking... then before serving, put a tiny bit of sugar free jam on top.

Italian Lasagna

This was a fantastic lasagna recipe. My only suggestion is that you should use a larger pan. Using a regular 9x13 glass dish I ended up having enough extra ingredients that I made another 9x9 dish of lasagna. Either use a deep lasagna pan or plan to need an additional pan.

Super Sausage Stuffed Mushrooms

Very good basic recipe. I did make a few changes. I left out the spinach, added in chopped mushroom stems, italian seasoning, and garlic powder. I also found that I had more stuffing than I had mushrooms to stuff... so I rolled the stuffing into small balls and put them in a freezer bag and froze them for later use.

Sweet Cheese Delights

Quinoa Pudding

Quinoa is one of my favorite foods... it's so versatile. I didn't have apple juice so I substituted orange juice. Also didn't have raisins so I substituted dried cranberries. I was spectacular! I think that I will try dried blueberries or cherries next time. Wonderful and versatile recipe.

Spinach Pecan Bake

Goulash Supreme

Delicious! I used Hot Hungarian Paprika and it gave this dish quite a kick. Very tasty. For days my husband raved about how good this tasted. This definitely goes on my Quick, Easy & Satisfying list.

Henry Bain Sauce

This recipe made a huge amount! I would have made a smaller amount but didn't want 4 opened jars of preserves taking up room in my refrigerator. If I ever make this again... I will make a smaller amount and use much less horseradish... it was much too hot and bitter for my family's taste.

Chicken Pot Pie I

This recipe is a real winner! So easy to prepare. I also baked mine a little longer to get a nicely golden brown crust (about 15-20 minutes extra baking time). Next time I will try adding some potato to the filling. I was actually just making this for myself because my husband has always said that he doesn't like pot pie... he loved this one and had seconds. I'll remember this recipe for Thanksgiving Turkey leftovers too.

Three Cheese Manicotti

Awesome recipe!!! I find that shaping the cheese mixture with my hands made it easier to stuff into the shells. Another trick that I have used is to cut the shells down one side to open them up and then put the filling in and roll them up again. No one will ever know that they are cut.
