Salsa Chicken

Very tasty and a quick supper for a weekday! Yet could easily serve this meal for company too! Such a nice way to do a Mexican flavored chicken dish. The family all loved it and said they would love to have it again. Followed the recipe using homemade taco seasoning and homemade salsa. Served it with Spanish rice, corn, and a salad. Garnished the chicken breasts with sour cream, chopped cilantro, chopped avocado and extra salsa sauce on the side. Delicious!

Spicy Chicken Thai Soup

WOW! What a great soup recipe! Easy to make and tastes wonderful...especially on a cold, blizzardy day!!! Dear Hubby and I absolutely loved it...definitely restaurant quality! I have plans on making this the next time we have a soup bar with guests! The kids loved the flavor and did not balk at the spice! The only changes I made were: used two lemongrass (all I had), used shitaki mushrooms instead of the white, and breast meat instead of thighs as did not have any. Next time I will use the thigh meat. I would like to try shrimp as an alternative to chicken for a change of pace as well. The spiciness of this soup was good for us as a family. May add a bit more curry paste if serving for only grown-ups! We chose to add a spoonful of cooked jasmine rice to the soup and it was a nice filling meal served with homemade multigrain rolls. Thank you Chef John for another wonderful recipe to go in the recipe box!

Harvest Salad

This recipe came to my email today and what perfect timing!!! Hubby was making dinner tonight as I shoveled the snow in the frreezzing cold. It is a nice trade off we have with each other...LOL! Came in to check my e-mails while dinner cooked and found this salad recipe. Just so happens I had most of the ingredients so thought I would make this salad to go with the baked salmon and roasted vegetables dear hubby was cooking. Substituted balsamic vinegar and olive oil (only 2 tbsp) as did not have the ones called for. Was low on the raspberry jam so added some bumbleberry jam I made in the summer. Substituted Asiago cheese in lieu of the blue cheese and added celery and apples as did not have any tomatoes. Had everything else called for. OMG was this ever good and paired very well with dinner. The dressing was to die for! Will not buy store bought again after making this!!! Served dressing on the side instead of on the whole salad. What a versatile recipe when you do not have all the ingredients. Can`t wait to try it with the walnut oil...its on the grocery list! This harvest salad recipe is a keeper and I will definitely be making it again and again! Thank you for submitting this awesome recipe!

Black Bean and Salsa Soup

Great soup and very versatile! My favorite kind of recipe! LOL! I love the fact that it can be vegan for our vegan friends. A great recipe to have in the recipe box! I chose to saute onions and garlic for more flavor; used chicken broth cause that is what I had on hand; used homemade salsa sauce (doubled); also added another can of beans (whole) as DH prefers chunks in his soup; used some homemade taco seasoning and dried chiles to taste. Have used toppings such as sour cream, cilantro, nacho cheese, and tortilla chips! Served with corn bread. Yum! Thanks Maryanne for a an easy, quick, and versatile recipe!

Delicious Ham and Potato Soup

This soup is as the title says...DELICIOUS! Made this soup for the family and company and everyone raved about it! Said I should open my own restaurant! LOL! Very easy to make! Made it as is with only a couple of changes. I used chicken broth for the water and nearly doubled the quantities of vegetables and ham as we like a chunkier soup. Chose to add some chicken boullion and some Magi seasoning to taste. With so much liquids in the soup it benefitted with the extra vegetables and ham and seasoning. Used sharp cheddar cheese, chives, and crumbled bacon for toppings. Chose to add garlic and corn the second time I made this. The variations are endless with this recipe ie corn chowder, clam chowder,etc. Thank you Ellie for such a delicious and versatile soup recipe!

Spicy Pumpkin Soup

Made this soup today to use up four cups of frozen pumpkin. Found the soup to need more seasonings for our tastes. Added extra tsp of Cajun seasoning to the double batch and extra clove of garlic as well. Also added some Magi Seasoning (about 2 tsp) which rounded out the flavor nicely. We chose not to add the cream this time as it tasted great on it own. Even the kids loved it! Served it with toasted Italian bread and white wine (not for the kids lol). Delicious!!! Loved how easy and quick this soup was to make! It's a keeper! Thanks Cat!

Homemade Apple Cider

OMG! The house smelled so good when making this cider! The kids commented it smelled like Christmas! I had enough apples from our apple tree to do eight batches of this recipe in my largest stock pot. I did not end up using as much sugar as the recipe calls for...the amount of sugar you would need would greatly depend on the tartness or sweetness of your apples. I ended up using approximately 1/3 c per batch for my apples. I also used a few more spices to add more of an apple pie flavor to the cider. I used cinnamon, allspice, nutmeg, and cardamom. I hope to can enough of the cider to enjoy throughout the fall and winter. The leftover pulp made a flavorful applesauce and also apple butter. Yum!

Spicy Strawberry Salad

Took this salad to a Potluck BBQ last night and it was well received by all...nothing left in the bowl! Had many compliments on the presentation and flavor. I liked the fact that the dressing has balsamic vinegar in it as I really enjoy that vinegar and other flavored vinegars in a lot of my salad dressings. Made the dressing recipe as is and liked the balance of sweetness to tanginess...but recipe is easily tweakable to change that balance if desired! Also liked that this dressing mixed well and the consistency was slightly thick and did not separate! This dressing does make alot so chose not to add it all to the salad...felt there was enough for two or three salads! Nice to have the dressing already made for the next salad. For the salad fixings I used what I had in the fridge. Mix of romaine and spinich, celery, red onion, pecans, and lots of strawberries and blueberries! Did not have any fresh mushrooms but I look forward to trying this salad with them next time. Thanks for submitting the recipe...one that I know I will enjoy all summer long!!!

Quinoa and Black Beans

Made this dish today and was very pleasantly pleased with the end result! Paired it with the Mexican pot roast that I made for shredded beef tacos and burritos. The whole family liked it...coming from the kids that is a compliment as they were introduced to quinoa before and did not like it all!!! Some of us chose to eat it as is; some had in in their beef buritos; some topped it with homemade salsa and avocados. It was yummy either way and I am sure there will be many other ways to serve this dish in the future! I followed the recipe with the excepion of using only one can of black beans (two would be overkill in my opionion). We liked the flavor overall but next time I will add a teaspoon of homemade taco seasoning and a little less cayenne to broaden the flavors a little more. Maybe even try adding some peppers for color and some salsa or tomatoes in the cooking process for an added level of flavor. An easy recipe to add some variety to it!

Tim Perry's Soup (Creamy Curry Cauliflower and Broccoli Soup)

I have made this soup several times now. The first time I made it as is and the kids loved the cheesyness of it...but hubby and I felt it could have used some more flavor. Since that first time I have been sauteing the onions with some garlic and diced up carrots and celery. I add 2 tsp curry powder and a tsp of garam masala to the mixture and stir in together. Then add the broth and broccoli and cauliflower. I also like to blend my soup with the immersion blender...so easy! Once blended, I find that the soup is thick enough and does not need flour to thicken it. I have used milk, cream, and evaporated milk all with great success. For a nice change I like to use coconut milk...it is really yummy. I also prefer to put the cheese on the table and let everyone serve their own amount to suit their own tastes. Overall this recipe is good as is, but for our own personal tastes I would like to add more to it! Thank you for sharing a recipe that can be tweaked to suit everyone's tastes!!

Party Pinwheels

I made pinwheel sandwiches for the first time for a bridal shower in January using this recipe. I made the recipe as is and did not find them too salty as other reviewers had mentioned. (I did add an extra 1/4 of a brick of cream cheese that I wanted to use up though.) I used the red and green tortilla wraps for a pretty colorful presentation. They were very tasty, easy to make, and gone in a flash! LOL! I have also made them for school lunches and my daughter liked them...until she realized there were black olives in them! Next time no black olives is her only request! LOL! This mixture paired well with ham slices put in the wrap for a change too! I am sure chicken or turkey coldcuts would work too!

Taco Seasoning I

We were preparing a Mexican themed rehearsal dinner for our son and needed to make lots of chicken and beef taco meat. Found this recipe for taco seasoning and was very pleased with the flavor it gave the meats. It was better then my previous recipe for tacos! EDIT: Also added this seasoning to a Black Bean Salsa Soup I made today and it added a great flavor to that as well!

Christmas Brunch Casserole

We had this Christmas Brunch Casserole for brunch today...Christmas Day...and I must say I do like the ease of Christmas morning when all you have to do is put the pan in the oven while you have family time opening gifts. Had not made a casserole like this for many years cuz the kids were not fond of it when they were little. Made it today and there was only two pieces left! I changed the recipe a little as per our family's tastes: red pepper instead of mushrooms; more seasonings; more cheese that I added to the whole mixture as well as on top in the last 10 minutes of cooking and more eggs. (I have hungry boys!) I love the fact I can use potatoes in this recipe instead of bread as per other similar recipes as there are gluten sensitivities in the family. All in all a good recipe and a great concept! Thanks for sharing!

Chef John's Pumpkin Pancakes

I had originally planned to make this recipe for Thanksgiving Day brunch but due to revised work schedules we had to have an earlier Thanksgiving dinner. After promising this brunch to the family I made it for supper the night before Thanksgiving instead...not unheard of to have pancakes for supper in this family...lol. The only modifications to the recipe was to use half whole wheat flour and orange juice and zest as I forgot to buy a lemon. Served these with real maple syrup, bacon and fresh fruit on the side. They turned out very nicely and the family absolutely loved this new variation of pancakes! My youngest loves to eat these plain for a snack as well. Will definitely make these again!

Apple Strudel Muffins

I finally found an apple strudel muffin recipe that worked for me! Others have been way too moist and not keepers according to my kids. As per other reviewers and for each batch of this recipe I used half brown and half white sugars; I added 2 tsp cinnamon and 1 tsp nutmeg (OMG...the aroma in my house was heavenly as these were baking); only used half the topping ingredients but added cinnamon and nutmeg and oats to it as well(used the other half of the topping on some blueberry muffins found on this site); used 2 large granny smith apples which 1 1/4 of the apples was shredded and the rest was chopped. The muffins rose beautifully and the recipe made 12 large muffins! Tasted awesome and felt there was plenty of flavor to them...and my kids approved of them too! Try this recipe and see for yourself! =)

Baked Coconut Shrimp

Great new recipe for shrimp that was enjoyed by our whole family. Served with a sweet and spicy sauce, but just as good without one according to my hubby. Could definitely see using this as an appetizer as well. It was a nice new way to enjoy shrimp! Thanks for sharing your recipe!

Heddy's Black and Red Bean Soup

I made this recipe for my vegetarian daughter. She and the rest of the family absolutely loved it. Will definitely be making this again. I followed the recipe as is but did not add the maple syrup and used frozen corn instead of canned. Also added thyme, basil and parsley for added seasonings! Served this soup with cornbread muffins. Yummy soup...thanks for sharing your recipe!

Ultimate Twice Baked Potatoes

I was looking for a side dish to go with ribs for my son's birthday dinner and found this recipe. It was a hit with the whole family and will become one of my go to recipes for BBQ get togethers. Love the fact they can be made up ahead of time and popped into the oven when needed...allowing me the opportunity to visit with friends and family. Followed the recipe as is with a little extra cheese and bacon for extra flavor!

Bean with Bacon

Made this soup soup on cold wintry day last month and the family enjoyed it! After reading the reviews of others I chose to make a couple of changes. Used chicken broth; only 7 slices of bacon (all I had on hand); added 3 carrots; 2 garlic cloves; thyme, salt and pepper to taste. Next time would not add cloves and would add a little more bacon!!! Great recipe as is and easily adapted to new variations! Thanks for sharing!

Penne with Spicy Vodka Tomato Cream Sauce

Another great recipe from this site! Absolutely loved this vodka tomato cream sauce! When I got this recipe I did not have any Italian sausage so I chose to make this without it and it turned out great! I did use less olive oil; doubled the vodka; and added an onion, Italien seasoning, and spinach to the sauce for our preference but otherwise made it as is. It turned out to be a great meatless alternative served with a Caesar salad and hot rolls! I can't wait to make this with the Italian sausage next time! Thanks for sharing your recipe...we now have a new pasta sauce to enjoy!
