Buffalo Chicken Dip

Yummy scrummy! I took this to a party tonight and it was a big hit. I made it with leftover cooked turkey from the freezer and bottled bleu cheese dressing. I used about half the shredded cheddar. There was a big spoonful left, and since I didn't get much to eat at the party, I came home and turned it into a pasta sauce by mixing it into some cooked spaghetti and adding some pasta cooking water to make a sauce consistency -- tasty! Thanks for the recipe.

Holiday Chicken Salad

I enjoy this recipe very much. I just made it with a kids' cooking class as part of our "chicken salad extravaganza" class and they liked it. I prefer it without the paprika.

Awesome Grilled Cheese Sandwiches

I baked these at 425 degrees, rack at lowest position, for 6 minutes on the first side and 4 minutes on the second side. Here's a general grilled cheese tip -- try a sprinkle of freshly ground pepper to the cheese when assembling. It sounds weird, but it tastes great! Thanks, Michelle.

Mendocino Chicken Salad

I mixed this up today to take to an amusement park -- my dietary needs make it very hard to eat out in a place like that. This was perfect -- delicious, filling, and portable; I didn't feel deprived at all. Thanks for the recipe.

B.L.T. Salad with Basil Mayo Dressing

I started making this recipe last summer and was so pleased to re-discover it in my recipe binder. Of course, garden-fresh tomatoes are the best -- any variety or a mixture works well. I'm allergic to grains so I leave out the croutons, but my family loves them. To make a main-dish salad, I add cubed, cooked chicken. Thanks so much for loved addition to our family's meals.

Roast Leg of Lamb with Rosemary

This was terrific! I didn't have quite as much honey as the recipe called for, but it was fine. Also, I didn't have time for it to marinate overnight, so I marinated it at room temp for almost 2 hours before roasting. Probably overnight would have made it even more flavorful, but this worked very well. I used the drippings and bone for a nice lamb broth which I turned into a lamb stew with the leftover meat.

Mexican Chicken Corn Chowder

We all enjoyed this very much. I only used 1/2 the amt. of chilies, thinking it might be too spicy for the kiddoes, but I think the full amt. would have been fine. I added extra chicken to up the protein and think a can of mexican-style corn would be a pleasant addition. Thanks!

Creamy Potato Leek Soup II

Fabulously rich but fabulous taste -- the two so often go hand in hand, don't they? Next time I will use 1/4 lb. bacon and substitute half and half for the heavy cream. I used my giraffe to half blend the potatoes before adding the remaining ingredients.

Roasted Vegetables

Thanks so much for a versatile recipe for winter veggies. I used 2 sweet potatoes, 1 lb. small Yukon Golds, 1 red onion, and 1 sm. butternut squash. This amount served 8 just fine. It took 45 minutes for them to cook to the tenderness I prefer. I did not separate the onion into pieces, but just cut it into thin wedges. I used these to accompany orange-ginger pork tenderloin and steamed green beans.

Honey Duck

This was the first time this otherwise-experienced cook prepared duck and it was a hit with my family. Thanks! My 5 lb. duck wouldn't have served more than 6. I served this with a green salad with pears and pistachios and oil and balsamic dressing, parsleyed potatoes, and bread.

Rosemary Marinated Lamb Chops

My whole family really enjoyed these. My only complaint was that the onion pieces scorched some during the searing process. Next time (and there'll certainly be a next time, I'm sure) I think I'll puree the onions with the remaining marinade ingredients and see if that prevents the problem. An alternative would be to wipe the onion pieces off the meat before cooking.
