Quick Black Bean Soup

Absoloutely delicious! I used only 1 can chicken broth and used salsa instead of tomatoes with chiles. Had to improvise what I had on hand. Recipe was fantastic! I added greek yogurt in place of sour cream and also to my own bowl, I added fresh diced avocado. Absoloutely perfect!Definitely a favorite soup!

4H Banana Bread

Delicious! I made a double batch. I omitted the nuts because i did not have any, but other than that...followed to a tee. Perfect recipe. To me, the sugar to banana ratio was perfect. Fluffed up nicely, browned on the top nicely and super moist. Yum!

Eileen's Spicy Gingerbread Men

One word...AMAZING!!! The flavor is my favorite of all gingerbreads...Followed recipe almost to a tee, I did not have cloves so I substituted allspice. Chilled in the fridge for about 20 hrs and had absoloutely no problem rolling dough out. I just put a bit of flour on the surface and the rolling pin and it came out great! The gingerbread men held shape and cracked very little. Did not compromise appearance enough to be an issue.

Quinoa and Black Beans

This was very good!!! I will definitely make again! I used green onions instead of regular, because that is what I had. I also used only 1 can of beans. Flavor and texture was delicious! I might add a little more spice next time because I like the extra kick- but as is, fantastic recipe! I also mixed one TBSP of lowfat sourcream to my personal serving. Yum!

Homemade Spaghetti Sauce

This sauce was fantastic! I let mine simmer in a crockpot on low for 8 hours for timesake and it worked great! The reason for 4 stars would be the way the recipe is written. I agree that 7C water is too much for my liking. I used 4 C water. My local stores do not carry ground tomatoes in paste- so I was forced to used Crushed tomatoes in puree. It seemed to work just fine for me. The flavor was very seasoned and delicious. Can't wait to eat the leftovers.

Banana Muffins II

Delicious, quick and easy!!!! I used only 2 bananas and added a bit of allspice- so delicious!!! I made 12 muffins, and cooked in a Convection oven for 22 minutes - Perfect!

Fruit-Filled White Cake

This was a huge hit!!! Cake and filling/frosting turned out fantastic! Although, I still gave 5 stars- for taste and presentation, the cake was not quite the consistency of fluffy white cake, but rather- spongy pound cake. Which happened to work beautifully anyway, but the cake was much different than I had anticipated. I also added a bit extra jam and pineapple to suit us, and again- turned out awesome! The Birthday Girl was very happy :)

Asparagus and Mozzarella Stuffed Chicken Breasts

Excellent! I used swiss instead of mozzarella, that is what I already had in the fridge. I also added some fresh minced garlic in the middle of each chicken breast. I used only 1 Tbsp of bread crumbs to cut some calories, and flavor was still delicious!!! Moist and flavorful! Even without the minor changes I made, this recipe is a 5 star, as written!

Homemade Black Bean Veggie Burgers

Awesome recipe! Followed exactly and had no problems whatsoever. I pre-made the patties in my patty press and let them sit for a couple hours before cooking, then I baked them in the oven. They were fantastic, and filling!

Tuna and Chickpea Salad

Very good recipe. I used green onion instead of red and also tuna canned in water instead of oil. I did add an extra can of tuna and 1 tsp. of olive oil. Flavor was great! We stuffed Whole wheat pita pockets and it was delicious. Next time I will probably add more feta, just a personal preference. Will definitely make again, and even take to parties for side dish.

Soft Christmas Cookies

These do have great flavor. I put one pan in the oven as directed (400deg. for 6 min.) and for some reason, mine would not come off the pan. Turned into a crispy, crunchy mess. For the remaining pans, I put them on greased foil atop a cookie sheet and baked at 375deg. for 6 min. They came off the foil beautifully and were soft and delicious! I put sprinkles on before I cooked them and they look great.

Beer Spice Cake

Delicious! I followed recipe exactly (minus nuts) and it came out fantastic. I doubled the recipe and it made about 5.5 cups of batter, so I made a regular 9X13 cake with 7 cupcakes. I tried a cupcake fresh from the oven and the taste was awesome! I intend to frost with cream cheese frosting.

Zucchini Grinders

YUM! I made this tonight for dinner and I was in heaven! I love fresh vegetables, so while the zucchini was cooking, I added fresh chopped mushrooms, green pepper, onion & garlic. I used sauce & seasoning stated per recipe. I topped my Husbands with the mozzarela, but I topped mine with Reduced Fat Blue cheese crumbled. So, so, so delicious! I baked in foil as stated, then I opened the foil for 3 min. just to crisp up a little! Can't wait for the left overs!

Waistline-Friendly Turkey Chili

Loved this recipe!!! So very delicious! Minor changes I made due to what I had on hand...didn't have cilantro, used an extra can of great northern beans, as well as black beans and used "open pit" bbq. Followed recipe otherwise for a delicious, crock pot chili that my Husband and I absoloutely loved!!!

Chicken Avocado Pizza

Awesome recipe!!! I am a huge fan of guacamole, so this really hit the spot for my family! The only addition I made to the recipe was adding some fresh sliced red onions, just for personal preference!!! Amazing flavor! I actually was able to taste each ingredient in each bite! New staple for my house.

Grilled Chicken with Rosemary and Bacon

Very delicious with very easy prep and no cleanup! Great recipe! Remember to take the rosemary out before eating, I made the mistake of getting a huge bite of it...and the flavor is a bit much. My Husband and kids (age 6, 3, and 2) liked it as well.

Kickin' Turkey Burger with Caramelized Onions and Spicy Sweet Mayo

WoW!!! Loved this recipe! My Husband loved it as well! Everything blended very nicely together. Since I really enjoy my food spicy, next time I will omit the honey in the Mayo Mixture- but it was still delicious just as written!!!

Garlic and Ranch Turkey Burgers

Really Good! I used 1.25 lbs of turkey, and added 1/4 cup bread crumbs. Grilled them on an outdoor grill, and right before I pulled them off, I put sliced red onion on top, covered with a peice of cheese to melt. Delicious!

The Best Turkey Chili

Amazingly delicious! I followed recipe exactly and the flavor is delicious!!! Never had chili with red wine in it. A fun variation to my regular chili. Will definitely make again!
