Hot Artichoke and Spinach Dip II

This is a favorite in our house and it always gets rave reviews when we make it for others. I don't always have the romano cheese so I just substitute extra parmesan cheese. This is even good with the cheap grated parmesan - no need to splurge on the expensive kind.

Black Chocolate Cake

YUMMY chocolate cake! I love chocolate, but don't always love chocolate cake. This one is moist and had good flavor. I substituted butter for the shortening because of some food allergies/sensitivities in my family and the cake still came out wonderful. The leftover cake also stayed moist and didn't get stale for nearly a week. I was amazed! I will definitely be making this again!

Grandmother's Buttermilk Cornbread

Incredible cornbread! My family likes a sweeter cornbread (like the Jiffy box mix) and they LOVE this. I don't always have buttermilk on hand so I soured my milk by adding a tablespoon of vinegar to a cup of milk and letting it sit for a few minutes. I have tripled this recipe and it just fit into a 9" x 13" pan. When doing this I had to increase the baking time just a bit.

Roasted Rack of Lamb

This is wonderful! I have never prepared or even eaten lamb before, but wanted to give it a try for a family seder meal. The mustard and breading are a perfect compliment to the flavor of the lamb. I used a digital temperature probe and cooked the lamb until it reached 140. It was perfect. We will definitely be preparing this again. I may also try this breading for other types of meat, as well.

Sweet and Sour Dipping Sauce

This recipe was just ok. It did not thicken up and was pretty runny and it tasted a bit too strong of vinegar. Even still, my family did enjoy it with our homemade eggrolls.

Best Bread Machine Bread

GREAT recipe. Allowing the yeast to proof like this makes all the differnce in getting nice fluffy bread. I have started doubling this recipe and making it by hand without the bread machine. It is also good using whole wheat for half of the white bread flour.

Day Before Mashed Potatoes

I wasn't in love with this recipe. I made these the day before and warmed them in the oven to serve. They were dry and stiff. They needed to have some milk or cream added in my opinion.

Microwave Oven Peanut Brittle

I cannot get over how EASY this recipe is to make. I must have made over a dozen batches of it during the holidays for gifts and bake sales. Everyone carried on about how wonderful it was. The beauty of it is that it only takes about ten minutes of your time!

Caramels I

I am a big fan of homemade caramels and these were wonderful! The recipe is simple to make and everone loved it. My only advise would be to use a digital thermometer and remove right at exactly 242 degrees. Any sooner and they are very soft, buttery and not as caramelly (but still tasty). Any later and they are very hard to cut and chew (but still very tasty!). I made these for Christmas gifts and they were very loved.

Downeast Maine Pumpkin Bread

This is outstanding! I made it following the recipe and it was perfect. I did several batches around Thanksgiving and froze several loaves. I pulled them out as needed throughout the holidays and they were every bit as good. This is going to be one of my holiday baking staples!

Hawaiian Bread I

This was good, but like the hawiian bread from the store. After reading the reviews, I decided to bake it in the oven instead of the breadmaker. It came out good, but rather dense. My family was not real keen on the coconut extract, but that is a matter of personal taste. I will try this again and leave it out.

Sushi Roll

This is a great recipe! My children have really gotten into the process of making sushi. We have made this recipe exactly, but we have also added cream cheese and/or tuna. Next we plan on trying some smoked salmon. I find the seasoning in the rice a bit strong so I use a little more rice. Even my 4 year old likes this!

The Best Meatballs

These are wonderful! I used just beef, but I think these would be outstanding with the mix of meats. I just used kraft parmesan and dried herbs because I was unable to get to the store. Even so, these are wonderful meatballs! I made them large (used 1/4 cup each), browned them per the recipe and place dthem in a crockpot of spaghetti sauce. They were wonderful to make ahead for a party and were a big hit. Everyone loved them!

Cinnamon-Raisin Granola

This is fantastic! My son has nut allergies and it is difficult to find a granola recipe without them. I was out of coconut so I left that out but I added some flax seeds, seseme seeds and sunflower seeds which were a yummy addition. I have made this twice. The second time I doubled it and used real maple syrup instead of brown sugar. Because it is already in liquid form I could skip the step of heating it on the stovetop and mixed the maple syrup, honey and oil directly into the dry ingredients. I cooked it a bit longer than the recipe calls for - closer to 30 minutes, but I watched it closely. It has a wonderful toasted flavor! My kids like this better than store-bought cereal and we have gone through a double batch in about a week because we also put it on yogurt and snack on it straight.
