What a hit -- and super easy to make! I used 3 large fresh peaches, because that's what I had on hand. I cooked them in a 1/3 cup water and added a little sugar to the water to compensate for not having the syrup that comes with canned fruit. I also substituted apple sauce in place of butter, to cut down on the calories. Instead of adding plain sugar on top, I used cinnamon sugar that I keep on hand for cinnamon toast. It came out great! This can easily be adapted for any seasonal fruit. I plan to try this again with blueberries, since this cobbler is almost gone after one evening!
