Creamy Rice Pudding

This recipe is very easy to follow, and the results were wonderful. I omitted the butter by mistake, and it was just fine anyway. To keep the egg from curdling, I stirred it into the last 1/2 cup of milk and added it gradually. The pudding thickened up perfectly. Thanks much for posting!

Apple Crisp III

Excellent! Our apple trees were full this year, so I've been working my way through the various recipes. This is my favorite...not only is it delicious, but it's probably the easiest recipe to make, next to applesauce. I took the advice of using a mix of brown sugar with white. I also reduced the butter by almost half and substituted apple sauce in its place. Everyone loves it!

Best Apple Crisp Ever

I'm afraid I must agree with some of the other reviews. I ended up with a petrified crust on top of mushy apples. Thank goodness I tried this out in advance ... I had planned to serve it to guests. Luckily, we have an abundance of apples from our trees this year so I can try a different recipe.

Garden Fresh Tomato Soup

This is the BEST recipe for tomato soup on this site, hands down. I omitted the cloves because I'm allergic to them and used olive oil instead of butter and it turned out just fine. I skipped the step of straining the mixture in my first batch, which was a mistake. Even though I have a VitaMix, I ended up with several pine-needle like pieces of tomato skin in the soup. Straining the blended mixture before adding to the roux is a must.

Peach Cobbler

What a hit -- and super easy to make! I used 3 large fresh peaches, because that's what I had on hand. I cooked them in a 1/3 cup water and added a little sugar to the water to compensate for not having the syrup that comes with canned fruit. I also substituted apple sauce in place of butter, to cut down on the calories. Instead of adding plain sugar on top, I used cinnamon sugar that I keep on hand for cinnamon toast. It came out great! This can easily be adapted for any seasonal fruit. I plan to try this again with blueberries, since this cobbler is almost gone after one evening!

Scrambled Eggs Done Right

Melt-In-Your-Mouth Meat Loaf

Great recipe -- slightly modified after reading some of the comments. Baked at 350 for an hour, used fresh onion and cut the brown sugar in half. Everyone loved it!

Tangy Slow Cooker Pork Roast

I used a dutch oven and cooked this on the stovetop in 2 hours. I also took the advice of a few by substituting brown sugar for white, and I added a spoonful of tomato paste to the mixture. After 1 1/2 hours, I cut the roast into thick slices so the liquid would cover all the meat while it finished cooking. It turned out great! Very moist and flavorful. I thickened the liquid with a little cornstarch and added mushrooms to make gravy, which everyone enjoyed. This recipe is a keeper!

Lemon Curd Bars

I used the Lemon Curd recipe from this website for the curd...it's way better than store-bought and very easy to make. I also reduced the butter by half and substituted applesauce in it's place -- a little healthier without sacrificing flavor.

Lemon Curd

I always substitute 1/2 the butter with applesauce to reduce the calories in my recipes. I had to reduce the sugar to 3/4 cup as a full cup was too sweet. Worked great! From what I've read, I believe it's best to add the butter/applesauce AFTER it's been cooking a bit. I've never had any problems with curdling, etc.
