Cheesy Beef and Bean Bake

Reviewed: May 8, 2002
A very good recipe that is easy to make. I added extra cheese between the meat and beans and some red pepper to add a little spice.

Pizza Pinwheels

Reviewed: Aug. 4, 2002
I made a few additions to this recipe and it was fantastic! I diced up pepperoni in some, and added crumbled, cooked sausage to others. After adding cheese and filling, i seaseoned with italian seasoning and grated romano cheese. I rolled and added more grated cheese to the outside along with garlic and herb seasoning. I refrigerated overnight, cut and baked the next day. Served with homemade marinara...realy impressive!

Cheesy Vegetable Chowder

Reviewed: Dec. 15, 2002
My husband and I loved this soup. I made a few tasty additions in vegetable preference, including chunks of zucchini, green onions, and lima beans. I also added an 8 oz can of tomato sauce and some basil, oregano, and parsley. I used more water than suggested and slightly less flour. Precooked orzo pasta mixed in gave it more substance. We will def. make this again! :)

Quick and easy way to eat your veggies. I added some chicken broth to the pan and it enhanced the delicious flavor.

Jo's Manicotti

Reviewed: Dec. 15, 2002
The only addition to the filling that i made was to add some shredded mozarella to it. I used it inside eggplant rolatini, which i wrapped inside a lasagna noodle and covered with marinara and mozzarella. Fantastic!

Banana Nut Bread II

We used unsweetened applesauce in place of the margarine and added 1/2 cup of chocolate chips. It was well received at our dinner party!

Baked Macaroni and Cheese

Reviewed: Jan. 11, 2003
I whipped together two eggs, added about a 1/3 cup seaoned breadcrumbs to the egg mixture, and then poured it atop the pasta. Then i added the cheeses (variety) to 1 can of evaporated milk that i let simmer. Add seasonings to the cheese mixture and when bubbly pour over pasta. To make it a complete meal, i steamed some broccoli florets, carrots, and cauliflower and added it to the pasta before pouring the cheese mixture in. Sprinkle the top with some more breadcrumbs and bake. It was DELISH!

Best Chocolate Chip Cookies

Reviewed: Jan. 12, 2003
This cookie is only good oven-fresh. I made them for a dinner party and a friend also brought cookies that she quickly baked from pre-made dough...they tasted the same after about an hour - hard.

Bruschetta II

Reviewed: Jan. 12, 2003
This was relatively easy to make (and quick cleanup- just my processor)and was a hit at a dinner party. I was a little unsure of how they would be recieved because it did not look like traditional bruschetta, but they are SO much tastier and there were no leftovers. I added some diced mozzarella to the tomato mixture for that complimentary taste. I will definately make these again...One problem though- the recipe made way too much pesto, and i did not even use the requested amount of almonds. Thanks for the recipe, Maryanne.

S.O.P.P.

Reviewed: Jan. 17, 2003
i took the advise of other reviewers and cooked the sausage seperately ( i broiled it, after having marinaded it and the onions in some teriyaki sauce) and added other spices to the potatoes as they were cooking. They took 20 min to soften and even then they weren't as soft as i'd like them.

Cheesy Sausage Zucchini Casserole

Reviewed: Jan. 29, 2003
This was a wonderful recipe, and it is so easy to experiment with. The only adjustments i made was adding a chopped italian frying pepper to the onion/sausage/zucchini/tomato combo, and some italian seasoning and parsley. I also diced up the sauasge before putting it in the oven. We will definately make this again! i think i might stuff this mixture inside an eggplant! Yummmy!

Beef Stroganoff with Noodles

Reviewed: Feb. 17, 2003
This was the first time i ever even ate stroganoff, and I liked it, as well as my hubby and his friends. However, it could have definatly used some carrots, green beans, even potatoes...mmmmm! I followed the recipe exactly, omitting the salt, and found that the bacon took a long time to cook. After simmering for the 1 1/2 hrs, i removed the floating bacon pieces and discarded them...they didn't look to appetizing! But thanks for the recipe we willl use it again!

Aunt Mary's Eggplant Balls

Reviewed: Feb. 17, 2003
Thank you, Aunt Mary! These were ABSOLUTELY FANTASTIC! i didn't even have the time to refrigerate them at all, but agree that it would only make for an improvement if i had. i peeled the skin off, because of preference, and mashed them after steaming (you need to stir them every few minutes) and only baked them for twenty minutes because i finshed cooking them in my pot of sauce. My husband and his male friends (sorry to be stereotypical) preferred them to my meatballs! I can't wait to make them into a veggie burger, too!! This recipe will live on in my family.

I followed this recipe exaclty, only omitting the corn and adding shredded cheddar to the top before baking. It was delicious! My 15 month old devoured it! This goes great with a salad with catalina dressing!

Great recipe for on-hand ingredients and really tasty! i only had 2 soy sauce packets but three would have been optimal, and i used 1/2 box of frozen mixed veggies.

Raisin Apple Muffins

Reviewed: Mar. 10, 2007
I thought these were delicious, only I would have liked 12 big muffins instead of small ones. Don't yet know how well this doubles, but i will try next time. The only changes I made were that I used 1 cup all purpose flour and 1/2 cup whole wheat flour, 1.5 tsp of cinn, 1/2 cup of Apple juice in place of the milk, 2 Tbs melted butter in place of the canola oil, and a little more than a cup of diced (red delicious) apples The crumb topping is also very tasty! My hubby and 18 month old son loved them!

Zucchini Pasta II

Reviewed: Mar. 20, 2007
I followed exaclty except making a few changes to measurement: I used 2 zucchini (one green one yellow) * 3/4 can instead of 3/4 cup chicken broth, added a little at a time to keep it moist and creamy omitted roasted red peppers (only b/c i did not have) I used 3 tablespoons whipped cream cheese and I added 1/2 cup milk with 1 Tbs of flour mixed into it into it. This was definately a keeper. I used someone else's suggestion and cooked my chicken breasts in ICBINB spray along with a tsp of it seasoning. Not bad, but next time I will try marinating in a lemon-based marinade and grilling before adding it to the mix.

Marie's Easy Slow Cooker Pot Roast

This is the exact recipe that appears on the onion soup mix box. i thought it was "eh" but hubby and kids loved it. I however am not partial to stringy, shredded meat, so hence my bias.
