The reduction process caused me such a whopping headache, I didn't even get to reduce it fully. I had to throw it out. So far, I've been able to keep my husband out of the kitchen. He has such high sensitivity to strong scents, I know even the lingering smell would cause him the same. Needless to say, we had peppered steak for dinner. And before someone suggests this was due to low quality Balsamic Vinegar, I always buy top of the line. Some things are worth the extra money. I am more than a little ticked that I had to throw it out, but my options were limited at that point. Now, to get rid of this headache. If you're sensitive to strong odors, consider skipping the reduction on this one.
PS: I've done a bit of research and found out that to reduce it without all of the fumes, it's better to use a lower heat and let it cook down slower. I may try this again, using the lower temp. - and on a day when I can open windows.
