Garlic and Tomato Tilapia

Fixed this for company based on input from the reviews. Salted and peppered fish then spread pesto liberally on top. Put garlic in can of diced tomatoes on the stove and simmered with a couple spoons of pesto sauce. Added reduced fat sour cream, stirred, and poured over fish after 10 minutes baking. Served with yummy warm whole grain bread, steamed asparagus, and Lemon Orzo Primavera from this website. They both went back for seconds! This is easy, lovely and healthy. Might serve with noodles next time to take full advantage of the sauce, but both my husband and our friend said it was great just the way it was. Thanks!

Tangy Cucumber and Avocado Salad

I cut the recipe in half as there are only 2 of us and ended up with less than a whole avocado. The texture would have been better with more but the tangy lime and the chopped jalapeno I added made it terrific anyway. So fresh, crunchy and cool...went great with grilled turkey hot Italian sausage and corn on the cob.

Kickin' Collard Greens

My niece sent me this last year and I have made it numerous times since. I did as one reviewer suggested and added about 1 tbls of Splenda Brown Sugar Blend and 1-2 tbls of apple cider vinegar. I didn't grow up with collards but they are a staple now. More bacon, too. Just yummy!

Bow Tie Pasta with Sausage and Sweet Peppers

I fixed this as Plan B Saturday as it was raining and we couldn't grill. Used suggestions by other reviewers: chopped onion, red and yellow peppers, hot Italian turkey sausage crumbled, can of diced tomatoes. Added partially cooked penne to mixture for about 8 minutes to let it soak up some of the juice and it was wonderful! Parm on the table to top it off. Easy, yummy and not too bad for you. Sourdough rolls on the side to sop.

Turkey and Quinoa Meatloaf

Really liked this except the topping was a bit sweet. We also like spicy so I will probably add some chopped jalapeno next time. Didn't have hot sauce or tomato paste (none open) so used ketchup like another reviewer suggested. Texture good baked on the foil covered sheet. Definitely do this again.

Potato Soup

We changed this a little but used this as a good base. Had about 3.5 C of mashed potatoes left over which went in later. Chopped 2 whole baking potatoes (small like diced). Sauteed onion in 2 Tbls butter, added garlic after onion softened, then added chopped potatoes. Let brown/soften in the butter for a few minutes then added about 2 C chicken broth. Let simmer for about 10 minutes then added the mashed potatoes and probably a cup of skim milk. Just added a little broth as needed for texture. Cheese on top with Bacos and whole grain bread - Yum! This was a good find.
