Stuffed Acorn Squash Supreme

My family loved the combination of sausage, broccoli, rice and apples. However, I nuked this at first for ten minutes, then another ten minutes after I stuffed them, and then ended up cooking them for another five minutes or so after I put the cheese on. I think next time I will cook them for fifteen minutes at first (flipping them around at five-minute intervals), also adding a little salt and pepper. Will make again,just need to add a little more cooking time. Also, the stuffing could have stuffed three whole squashes.

Sweet Green Bean Bundles

The flavor was great, but my daughter and I both thought that the bacon was under done and the beans were over done. I think we'll try this again with fresh or frozen beans, and maybe we'll try partially cooking the bacon first. We also used only half the brown sugar, and that was plenty for us.

Chicken Enchiladas II

Boy, I hate to buck the tide, but I did not like this recipe at all. I wondered how one stretched 1-1/2 cups chicken into 6 12-inch enchiladas. By adding an additional 1/2 cup chicken, I barely got 8 6-inch enchiladas. The sauce was very bland, and I just feel the overall this dish was ho-hum. Sorry.

Chicken Eugene

I cut down on the dried beef, rinsed it, and this dish was still a little salty for our tastes. It was very easy, however, and I'll probably make it again. I think I'll add a little sugar to the sour cream mixture next time and see if that cuts the saltiness.

Linguine in Spicy Red Clam Sauce

Got a clue from a previous reviewer and adapted this to fresh mussels. The kids loved this! Made the sauce omitting the clams but added 8 oz. clam juice, all the anchovies and oil in the can,and let the whole thing simmer for about 15 minutes. I then threw in about 2 lb. fresh mussels (cleaned) and let those steam open. I served this over linguine with parmesan. What a great sauce!

Mushroom Sauce

This was great! I had a bag full of morels I wasn't sure what to do with, so I used them in this sauce. I used dry sherry instead of milk and added some garlic powder. Definitely a keeper.

Roast Leg of Lamb with Rosemary

My 13 year-old daughter has always turned up her nose at lamb-- until tonight! She had seconds of this dish and loved it. I inserted slivered garlic into the lamb and added baby carrots, quartered new potatoes, and onion wedges along with the leftover marinade to the roasting pan for the last hour of cooking. Everything turned out great!

Cheese Lover's Tuna Casserole

Loved this! Threw it together while my daughter was at piano lessons, and it was done when she got home. I added about 1/2-1 teaspoon curry powder and 1/2 teaspoon garlic powder to the tuna mixture, but also cut the shredded cheese in half(8 oz total). Will make this again!
