Simply Guacamole

I was looking for a quick guacamole recipe that didn't have too many ingredients. This worked great. I only had 2 avocados and the rest of the ingredients on hand. I was shock how good it tasted. I played with the lemon juice and salt and pepper. I added a bit of garlic salt because I normally add garlic to guacamole. Play with the ingredients and have fun. this was very good.

Baby Back Ribs

I just followed the recipe. I used a store bought BBQ marinade. Seasoned the ribs and let them set, and them poured the marinade and let them sit overnight. Sprayed the foil and cooked for 2 1/2 hours. Ribs fell off the bone like others suggested. I read people removing the membrane. I didn't bother still was good to me. Great recipe will keep on hand always. Definitely spray the foil for non-stick clean up. That helped greatly.

Brown Rice Turkey Soup

I used this recipe for my leftover turkey from Thanksgiving. I knew I wanted soup instead of sandwiches. I followed the recipe but added some diced sun-dried tomatoes also. It was delicious. I didn't have instant brown rice, so I made a pot on the side and just let it cool and dumped it in at the end with some swiss chard for some greens. Gonna try making it without the turkey and see how it comes out. Always looking for a good soup to make. This is a keeper.

Spinach Lentil Soup

I was looking for something to pair lentils and spinach. This worked quite well. I took some tips from others and added spices and garlic. I used chicken broth instead of water. Turned out really well.

Easy To Do Oven BBQ Chicken

Liked this recipe. I just made a mix of my own marinade. Seasoned the chicken really well and removed the skin. Made a marinade of honey, balsamic, little soy, and whatever BBQ sauce I had on hand. Let marinade for 2 days in the fridge. One day should work. I was just busy and couldn't cook it right away. Covered in foil baked for an hour and took foil off for about 15 minutes to make crispy. Worked great. I am trying to learn how to take and cook the skin off of chicken and the this recipe worked. The chicken was still most and tender. I had chicken leg and breast, cut and skinned turned out great. I think the flavor comes from seasoning the chicken once the skin is off. I let the seasonings sit before I put it in the marinade. Poultry, garlic/parsley, onion, pepper, garam masala, basil. Totally good.

Chicken Avocado Pizza

I was unsure whether or not to use fresh pizza dough or prepared. I used freshed and rolled it out. Next time I will use pre cooked. Other than that I found this to be a delicious pizza even though I had some problems. I didn't roll out the dough thin enough so it turned into a deep dish version. But the ingredients where fine. I didn't miss the tomato sauce at all. Avocado worked very well. Tasted great.

Ramen Noodle Stir-Fry

I normally don't add this many things in my ramen. But I liked this recipe. I added green beans, shrimp, garlic, stir fry sauce. I stayed away from that death packet. This was a filling meal. You can pretty much use what ingredients you like. Just add your own touches and spices and spin. Nice quick cheap meal.

Four Cheese Margherita Pizza

Starting to make my own pizzas lately. I used this recipe but altered it. I didn't have any fresh basil, or the fontina cheese or feta. I used a shredded pizza mix cheese. Marinated the tomatoes the same and Used a whole wheat pizza crust. I also added left over veg like olives and mushrooms. It came out great. I will say brushes the pizzas with the marinade makes it a bit oily. So I cut it back. Good pizza recipe will use again.

Baked Kale Chips

I buy so much Kale that it was finally time I tried to do this recipe. The directions are very simple and and you can add the seasonings that you like, which is what I did. I added garam masala and a bit of turmeric. The first time I did this they came out okay but a bit soggy. I think I didn't dry the Kale all the way. Second time was a charm. I made sure my Kale was dried all the way through. 15 minutes in oven and I had some nice cheap delicious chips. Will be using this technique often.

Garlicky Quinoa and Garbanzo Bean Salad

I was looking for a non meat/dairy recipe. I was a little skeptical because of the grain mustard. I normally don't like it at all. I followed the recipe. I did ad wet ingredients and whisk them in bowl with garlic first. After adding quinoa, I put in broccoli and garbanzos. Adding salt ane pepper it all came together great. Mustard was mild and tarragon was a nice back flavor. Will make again.
