About this Cook
I am learning about healthier options for the cuisine I normally eat. So I am trying to switch ingredients and cook more healthy. I am not a vegan or vegetarian, but I do enjoy a good meal whether it is with meat or not.
My favorite things to cook
I love to learn new ways to cook chicken, pork and fish. As well as vegetables and stir-fry's.
My favorite family cooking traditions
I grew up eating soul food. So anything that reminds me of my culture is great. Unfortunately that food isn't the healthiest so I try to substitute a lot of the ingredients and find new flavors.
My cooking triumphs
I can grill a really good steak and vegetables, and make a really mean salad with home-made vinaigrette.
My cooking tragedies
I am still struggling with Lasagna, Meatloaf, and anything with baking. LOL

Lentil Chili
I made this last week. I think overall it turned out okay. I think next time I will lesson the amount of bular and lentils. It seemed toward the end, they were soaking up most of the liquid. I also think I will add more spices to bump up the flavor. It tasted a bit bland. Overall I will keep working with this recipe because I like the healthy ingredients.

Baby Spinach Omelet
I made this for new years day brunch. I changed the recipe a bit but it came out amazing. I sauteed onions, mushrooms and bell pepper, and wilted a bit of the spinach in that mixture. Then I created the egg mixture according to the recipe. I felt there wasn't enough egg mixture to accommodate the full amount of spinach. So I added 3 eggs instead of 2. Added a bit of unsalted butter to the pan and cooked omelette per directions. I added some cherry tomatoes on top and slice avocado. It was the best omelette I have every eaten and made on my own. This recipe has given me the confidence to stop wasting money paying for omelettes. Give it a try.

Garlicky Quinoa and Garbanzo Bean Salad
I was looking for a non meat/dairy recipe. I was a little skeptical because of the grain mustard. I normally don't like it at all. I followed the recipe. I did ad wet ingredients and whisk them in bowl with garlic first. After adding quinoa, I put in broccoli and garbanzos. Adding salt ane pepper it all came together great. Mustard was mild and tarragon was a nice back flavor. Will make again.
