About this Cook
I am learning about healthier options for the cuisine I normally eat. So I am trying to switch ingredients and cook more healthy. I am not a vegan or vegetarian, but I do enjoy a good meal whether it is with meat or not.
My favorite things to cook
I love to learn new ways to cook chicken, pork and fish. As well as vegetables and stir-fry's.
My favorite family cooking traditions
I grew up eating soul food. So anything that reminds me of my culture is great. Unfortunately that food isn't the healthiest so I try to substitute a lot of the ingredients and find new flavors.
My cooking triumphs
I can grill a really good steak and vegetables, and make a really mean salad with home-made vinaigrette.
My cooking tragedies
I am still struggling with Lasagna, Meatloaf, and anything with baking. LOL

Garlicky Quinoa and Garbanzo Bean Salad
I was looking for a non meat/dairy recipe. I was a little skeptical because of the grain mustard. I normally don't like it at all. I followed the recipe. I did ad wet ingredients and whisk them in bowl with garlic first. After adding quinoa, I put in broccoli and garbanzos. Adding salt ane pepper it all came together great. Mustard was mild and tarragon was a nice back flavor. Will make again.

Baked Kale Chips
I buy so much Kale that it was finally time I tried to do this recipe. The directions are very simple and and you can add the seasonings that you like, which is what I did. I added garam masala and a bit of turmeric. The first time I did this they came out okay but a bit soggy. I think I didn't dry the Kale all the way. Second time was a charm. I made sure my Kale was dried all the way through. 15 minutes in oven and I had some nice cheap delicious chips. Will be using this technique often.

Simply Guacamole
I was looking for a quick guacamole recipe that didn't have too many ingredients. This worked great. I only had 2 avocados and the rest of the ingredients on hand. I was shock how good it tasted. I played with the lemon juice and salt and pepper. I added a bit of garlic salt because I normally add garlic to guacamole. Play with the ingredients and have fun. this was very good.
