Strawberry Pie Filling

Reviewed: May 26, 2013
Delicious! I added 1/2 tsp cinnamon and used a homemade pie crust. Great to make ahead because it needs plenty of time to set if you are making pie.

Morning Glory Muffins I

Delicious! I used 1 cup whole wheat flour, 1 cup AP. Used apple sauce in place of oil and skipped the walnuts and wheat germ. Will definitely I make again.

Quick Bean and Turkey Italian Meatballs

Reviewed: Apr. 25, 2013
Very good! I didn't have butter beans so I used great northern beans. Like the other reviewer, I put the beans in the food processor and added parmesan cheese, fresh herbs (parsley and basil), and garlic. Very tasty. My kids loved them.

Healing Cabbage Soup

Reviewed: Dec. 5, 2013
This is probably my favorite soup recipe. So delicious and versatile. I like to add chicken or chicken sausage, plus carrots and whatever other veggies I have around. I use plain diced tomatoes and add my own spices. Yum.

Roasted Beet and Kale Salad

Reviewed: Jan. 1, 2014
Incredibly delicious! I will make this again and again. I didn't have apple cider so I used apple juice. Also because of what I had, used pecans and pine nuts in place of cashews, regular raisins, and dried cranberries. I massaged the kale a bit with a drizzle of olive oil and salt before mixing with other items because I like my kale a bit softer. Great recipe and super versatile. The beets were a wonderful complement to the kale.

Ham Broccoli Braid

Reviewed: Jan. 23, 2013
Easy and tasty. I used leftover ham, cheddar and mozzarella (because that is what I had), modified with 1 T of mustard (based on reviews) and 2 T of mayo. Also made my own pizza dough and wrapped it like a Stromboli. Not as pretty but worked for family dinner.
