Camp Cornbread

Delicious cornbread! Used with "Smokin' Scovilles Turkey Chili, another great recipe from this site. It is a bit sweeter than traditional cornbread but I like it that way. The only thing I will do differently is change my bake pan. I used a 9x13 glass pyrex and I think it was a spread too thin in that. Next time I will use just a little bit smaller pan and that would be perfect!

Smokin' Scovilles Turkey Chili

Made exact to recipe with the exception of a jalapeno instead of habanero as they didn't have it at my market. Lucky me! I gave five stars because it was awesome turkey chili and it's called smokin' for a reason but It was a bit too smokin' for me although I ate it all(way too spicy for my hubby). I think maybe if I use one can with green chili and one without or cut back the red pepper flakes it would be better for us. Really though, Best Chili EVER! Try sprinkling a shredded cheese blend over the top with a nice dollop of sour cream, YUM!

Corned Beef and Cabbage I

I realize this recipe is very basic but the timing of the vegetables is what makes it amazing. My family always boiled everything together for the same length of time which makes the veggies and potatoes mushy. My Grandma recently passed away and I have taken over the traditional dinners which I've never really made before. This recipe has given me a whole new take on corned beef and cabbage. The cabbage is perfect after 15-20 min. and the broth is amazing, I like to use the leftover broth for a good soup or stew, just refrigerate overnight and skim the hard fat off, add whatever you like and voila! Best Peanut Butter Cookies Ever

This is the second time I've made these cookies and they are sooooo good. Both times I used half white half brown sugar and added chocolate chips. First time I made balls and flattened a bit with the back of a fork to make the traditional imprints and they came out exactly as I put them in. They did not spread, but were still good. Second time, I flattened them into a cookie shape thinking they would come out the same but no - this time they spread! I had huge cookies that tasted even better than the first. So, I'll flatten my cookies from now on and make them a bit smaller. I used superchunk skippy both times and reading the reviews I see people debating over the peanut butter used. I wonder if maybe it's the difference between creamy and chunky? I would use a more expensive peanut butter either way but mine came out crispy on the outside and nice & chewy on the inside. I will make these often, Thank You!!

Banana Crumb Muffins

These are sooooooo good!! My husband raved over them! I added a touch of vanilla and cinnamon to the banana mixture but followed the recipe exactly except I forgot the salt! They came out wonderful anyway but I won't forget next time!! Made exactly 10 beautiful muffins, perfect!

Spinach-Stuffed Chicken

Great recipe. 4 stars as is but with a slight tweak it can be 5. I used diced fresh tomato, feta and light sprinkle of parm in filling after removing from heat. We don't care for mushrooms so I left them out. I also added a tbsp or 2 of cream after adding spinach back in w/garlic & onion. Used thin sliced cutlets pounded just a little to even them out. I always season my chicken with S&P and garlic powder regardless if the recipe calls for it or not so you can taste the chicken IMO. Also, to cut fat, I find that if you spray butter flavor Pam on top, it works just as well as butter or olive oil and taste good too.

Marinated Ranch Broiled Chicken

This was pretty good. The ranch was a little overpowering. I think I'll double the oil and vinegar next time to have more of a marinade and tone down the spice. Definitely worth a try!

Parmesan Chicken II

These were delicious. Would have been 5 stars but I made alot of alterations based on the most helpful review, I basically used her recipe instead of the original. They came out juicy inside and nice and crunchy outside. Will definitely make again.

Great salad! Made for 4th of July party and everyone raved - I did add some sour cream in w/the mayo so it wouldn't taste like ALL mayonnaise, besides that, I wouldn't change a thing - Delish!

Butternut Squash Casserole

Big success! This is the first time I've ever cooked any kind of squash. I took other reviewers advice and roasted it cut in half, meat side down. The skin peeled right off. I made the recipe "as is" with the exception of adding a little cinnamon, ginger, and oops, I had it out, but I forgot to add the brown sugar to the topping. Didn't matter though, Everyone raved over it! I read the reviews and I'm so glad I didn't cut back on the sugar. I don't think I would have liked it so much without the full amount of sugar. It's like a pumpkin type of dessert or a Thanksgiving side dish but I served it on a normal weeknight and it was excellent! I definitely suggest that you try the recipe before cutting back unless you need to watch your sugar intake or for personal preferences. Thanks for a delicious recipe! UPDATE- I used the brown sugar in the topping this time and it was way too sweet. I'll make it again w/o the brown sugar in the topping like the first time.

Easy Arugula Salad

Excellent! The flavors blended wonderfully! Arugula can taste bitter if you don't have the right balance of flavors and this recipe is perfection! I did add some dried cherries as another reviewer suggested and did not use the avocado. Thanks for an awesome salad!!

Big Al's K.C. Bar-B-Q Sauce

Made the recipe exactly as is, seems not many people do. Every review I read changes something. The sauce was good! It was a little too sweet for my taste but I'll add fresh garlic and onion and cut back on the brown sugar or molasses next time. Had leftover fresh ham roast, turned into pulled pork with this this recipe. Would be five stars if not for the sweetness. Great recipe though, with a cutback on the sugar elements. Thanks!

Best Ever Crab Cakes

This was the first time I've ever made crab cakes and they were the best ones I've ever tasted! I did add old bay, used a little extra crabmeat and rolled them lightly in bread crumbs mixed with parmesan cheese because I wanted to seal in the flavor and wasn't sure if they would stay together properly without. I always had crab cakes with alot of bready type fillers and never really cared for them until I made these. Huge hit with hubby, can't wait to make them again!Thanks!

Cranberry Orange Dipping Sauce

This was really good! I made this for fondue (chicken, beef & pork, but sauce was for chicken). It was a big hit! Everyone loved it including myself. I think the roux of OJ & cornstarch was the kicker, I may use a little more next time plus a dash of nutmeg or pumpkin pie spice in addition to the cinnamon. Excellent recipe! Thank You!

Horseradish Sauce

I made this recipe for dipping w/chicken, pork & beef fondue,( mainly for the beef). I happened to be around horseradish lovers so it went over really well but I thought it was too horsey,(had no sinus problems at all that night!). This would probably be great spread on a steak as indicated but even then I think I would cut back on the horseradish a little. Overall, it's a great recipe and I will definitely use again. Thanks!

Oriental Dipping Sauce

All I can say is SALT! I even read the reviews and cut back on the soy sauce but it was still really salty. I refrigerated it overnight which really blended the flavors and this would have been excellent were it not for the saltiness. I will try again though because I think this recipe has alot of potential, just needs some experimenting. Thanks!

Ham and Cheese Breakfast Casserole

This was pretty good. I made it the day before New Year's and my hangover thanks you so much! Everyone enjoyed it but I thought something was missing. I think I'll try some chopped onions and season the bread cubes next time. I absolutely love the cornflake topping, never used them for anything but cereal! Reminds me of the store-bought vegetable lasagne topping I love so much. This is a 5 star recipe for an easy no-fuss breakfast but I can only give 4 since it really needs a little oompf to make it great. Either way, I looked pretty cool dishing this out while everyone else could barely get off the couch! Thanks so much!

Sherry Apple Pork Chops

This was great! My husband hates apple pie so I thought this might be too much for him. He LOVED it!! I used only four 1/2 in chops and kept recipe the same - except cook time was only 35-40 min. I wanted to try out an oven bag I bought, (no mess), and it worked unbelievably well with this! I put chops on bottom as another reviewer suggested and added cornstarch to sherry. Excellent!! I knew I would like it but for my husband, (a cooked apple hater), this recipe is a raving success! Thanks!

Marinated Tuna Steak

This is the best tuna marinade I've tried! Every time I prepare tuna steak it seems to come out tasting similar to the albacore you buy in a can. This, however, is delicious. I marinaded 4 hours and although I didn't have any fresh herbs on hand it came out great anyway. I did add a little extra garlic and OJ. The tuna was moist and juicy and extremely flavorful. My husband raved over it! Thanks for a really great recipe!
