French Toast I

We thought this was an excellent basic recipe! Making it the second time around we tweeked it to our liking. We used 1/3 cup of milk and 1/3 cup of half and half and 1/8 teaspoon of nutmeg. We did use Texas Sliced bread but didn't soak the tar out of them. We were able to get 9 slices out of the mixture. We did as recommended, put a lid on the pan while they were cooking and used butter to coat the bottom of the pan. We topped with Maple Walnut syrup and powdered sugar. UMMMMM

Key West Penne

My gosh this was good! I didn't have the olives so I omitted them. My family including my five year old son, loved this dish and so did I! I will make this again. There were plenty of it too.

Best Carrot Cake Ever

I love carrot cake and have made several different recipes over the years. What I found is that this is the best Carrot Cake Ever! I recieved rave reviews on it! I made exactly as stated! Easy to make and a very big hit. I followed someone's advice about the frosting. I also used the Whipped Cream Cheese Frosting found on this site and it was devine! Great recipe Nan.

Sweet Potato Casserole II

This is the ONLY dish that was completely gone by the end of Thanksgiving lunch. Everyone, but me, loved it. I thought it was good but very very sweet. But, like I said, there where no leftovers with our crowd.

WOW! This is a wonderful recipe! I have to say this is one of the best gaucamole recipes I have ever tried. I love Tex-Mex and have tried a few different recipes over the last few years. Very good job! This one is a keeper!

Kosher Salt Encrusted Prime Rib Roast

I made this recipe for a large dinner party. At first I was nervous about the amount of salt this recipe called for. The primerib roast I purchased was well over $160 since it was 16 pounds. I did however, follow the SCALED recipe exactly. (I had the butcher cut away the bones but still kept them in place when he tied it up for me) I can't say enough how wonderful it was. I used every bit of the required salt (8 cups). Through the cooking process it formed a very nice shell. When it was time to remove the salt it was very easy. The roast was not salty at all but it was super tender and juicy. EVERYONE LOVED IT! Every single guest asked me for the recipe. I will never use any other recipe for primerib again.

Enchiladas Suizas

This recipe is a complete hit at my house. My husband loves it so much he asks me to make an extra pan that he can take to work!! I did slightly change the recipe though. I increased the salsa verde, about doubled it. And I double the cheese too. Instead of dipping the tortillas in the verde sauce, I mixed most of it in with the chicken. I reserve enough of the sauce to spread on top with the cheese, olives and green onion. I have also made this with turkey too.

Amy's Cilantro Cream Sauce

EXCELLENT SAUCE!! I made this last night for "Pub Grub" food to watch the fights. I served it with Southwestern Eggrolls and also with fried shrimp. I didn't have fresh cilantro on hand so I used 2 tsp of dried. It turned out beautifully. When all the finger foods were gone we used the sauce that was left over to dip corn chips in.
