Brunch Egg Bake

Hungarian Goulash II

This was really good. We used stew cubes because that was what we had, and I used beef broth instead of water. Hubby and teen son gave it a thumbs up. This was a nice meal to come home to after work on a chilly day. While my water for noodles boiled, I mixed up my thickening agent for the sauce. It was a very pretty rich red/brown sauce. We ate this with a tossed garden salad, and french bread. Thank you for sharing.

Whole Wheat, Oatmeal, and Banana Pancakes

Yummy. I had to add a little extra milk so the pancakes weren't so dense. The teenages in the house liked them. We will have extras to heat up during the week.

One-Pan Taco Dinner

I am not a "make it up as I go cook". I need a template to work from and this was perfect for my ability. I added onion and garlic when I browned my meat, extra taco seasoning and used a can of diced tomatoes with green chilis. I aso added a little bit of cumin. I have to cook a day or two ahead as my hubby works afternoon shift, and this was a perfect quick thing to toss together for tomorrow. I'll send his with lettuce, black olive, salsa and cheese on the side. Thank you for sharing!

Slow Cooker Chicken Cacciatore

I am giving this 4 stars since I couldn't make this to letter. I had to sustitute canned tomatoes and stewed tomatoes for the spaghetti sauce. I also left out the mushrooms and green peppers since my hubby isn't a big mushroom and pepper fan. I did put my skinless, boneless chicken in the crockpot straight from the freezer. My chicken was cooked to proper temperature after 7 hours on low, and 2 hours on warm. (My son put the crockpot on warm, per my instructions when he arrived home from school.) The chicken was tender, but not mushy. I walked in the door after work and the house smelled like heaven! We served this over egg noodles, with a fresh garden salad, and italian bread. Great meal for a workday. Thank you for sharing.

Pasta, Broccoli and Chicken

This was really good and a nice change of pace from stuff on the grill. It's a nice pasta dish without the heavy cream sauce or tomato sauce, which made it lighter for summertime. Adding this to the receipe box!

Easy Bake Fish

I made this using cod filets. I baked them at 425F for twenty minutes.It was really good. Making it with salmon for my hubby to take to work tomorrow. This was easy to make after being at work all day. I served it with baked sweet potatoes, and a fresh tossed salad.

Marinade for Steak I

Marinated a pot roast overnight and tossed the roast in the crockpot the next day with a can of tomatoes on top. Yummy!!!! Served it with a multigrain rice/quinoa medley, steamed veggies and salad. Made a nice "Sunday Dinner".

Balsamic Roasted Pork Loin

This was a great dinner on a work night. I marinated the tenderloin overnight and while I was preheating the oven after work I sliced up carrots and potatoes and added them to the pan after tossing with the extra marinade I set aside the night before. My teen boys said this was a keeper.
