Coconut (Haupia) and Chocolate Pie

Beautiful, delicious pie. I made it exactly according to the recipe, including whisking the custard like crazy while it was coming, and it came out perfectly. It was sliceable and pretty darn good after an hour in the fridge, but it was absolutely amazing the next day. We really liked the jello-like texture of the haupia layer and the rich chocolatey velvet of the chocolate layer. Personally I also preferred the whipped cream on top of the haupia layer, I think it helped give more of a contrast with the chocolate.

Three Berry Pie

I made it with frozen strawberries and blueberries, and even though I increased the cornstarch to 1/4 cup it still came out very watery. The filling was also too sweet, maybe it would work with raspberries and blackberries, but the blueberries were too much. The crust was great though (made with butter instead of shortening because that's what I had). I brushed the top with butter and sugar and it came out nice, tender and crisp. I wish I had pre-baked the bottom shell before putting in the fruit, though, because it came out kind of doughy.

Ninety Minute Cinnamon Rolls

Great recipe! I've made a few times and they came out yummy but a bit heavy until this last time, when I used self rising flour instead of all purpose. Magic! They came out fluffy and light. Like other reviewers, I too topped them with a cream cheese icing (1/4 c butter, 1/2 c cream cheese, about 1 c powdered sugar).

Chef John's Peach Cobbler

This was easy to make, delicious and beautifully puffed up. In my oven it was done after about 42min. I had to use canned peaches and pears because that's what I had on hand. The cup of sugar in the batter was a bit too sweet given the sugar in the fruit, so if I use canned fruit again, I'll reduce it to 2/3 cup. The Five-Spice powder was nice but I would have liked a little more spice. Next time I'll add cinnamon and a touch of nutmeg.

My-Hop Pancakes

Fluffy and perfect! This is the perfect pancake recipe. I have tried many over the years but they always came out flawed in some way -- too flat, too bready, too thick, too something. I followed the recipe exactly and these came out with the perfect brown lacy edges, fluffy insides, and slightly sweet flavor that I love. The one tip I will add is that these cakes do have to be watched carefully for burning a bit more than other recipes I have used. They seem to cross over into burned territory in a flash. But that's a small price to pay for perfect pancakes, I say.

Spaghetti Carbonara II

Delicious, quick and easy! I made it a little healthier by using ground turkey that I seasoned with herbs, salt and black pepper instead of bacon, and adding some frozen chopped spinach after the onion and garlic were cooked.

Chocolate Mint Candies Cookies

Perfect just the way it is. I couldn't find Andes mints so I made it using Trader Joe's dark chocolate mints, which I had to break up into pieces. Worked great.

Buffalo Chicken Dip

Delicious!!! It really does taste like a creamy version of buffalo wings. I used shredded chicken breast that I had leftover from another recipe and chopped it up. I made it on the stovetop on low instead of a slow cooker and it came out wonderfully.

Campbell's® Slow Cooker Hearty Beef and Bean Chili

Very yummy! I did 2lbs of beef and added extra cayenne pepper, a dash of cinnamon, and a little sea salt. You really do have to let it cook the full 8 hours on the low setting in order for it to get nice and thick and tasty.
