Best Chocolate Chip Cookies

Reviewed: May 11, 2013
AWESOME Recipe! The only thing I added was 1 teaspoon of butter extract. Cooked in high altitude, and didn't even need parchment paper. Thick and chewy.

Poppy Seed and Banana Muffins

Reviewed: Feb. 19, 2013
I try not change too much in a recipe the first time, but we just can't help it. I added an extra banana(I had too many ripe ones), I substituted buttermilk for milk and lemon juice, and agave nectar for the honey & 1 teaspoon each of butter extract(Bakers need to check this extract out!), and vanilla. In the dry goods I added 1/2 cup of flax seed meal, along with 1 tsp cinnamon, 1tsp cardomon. I cut the poppy seeds back to 2 1/2 TBL I also added at the end 1 & 1/2 cup frozen blueberries and 1/2 chopped walnuts. Delicious. Just the right amount of sweetness due to the extra banana, and now it almost needs 1/4 cup more flour so the the paper will peel off. A definite keeper. Very healthy. One could also add raisins or another dried fruit. The only thing I don't like is the oil, but next time I will use half walnut oil half veg oil. It made 17 muffins that I cooked for 23 minutes. If one wants more sweetness, try adding a streusel topping before baking-1/3 c brown sugar, 2 T flour, 1 tsp cinnamon, and 1 T soft butter. Kind of defeats the healthy part tho!) Thanks swimmerv1! :)))

Chocolate Mint-Filled Cookies

Reviewed: Feb. 8, 2013
I only made a half of a batch after reading the others reviews, and wish I made a whole batch. They looked just like the picture! I wonder if that whole egg made a difference instead of a half? Anyhow I only made 22 whole cookies. If the ball is too small the mint oozes out of the side. I took a small cookie scoop, and then halved that amount.I added 1 tsp. hazelnut extract to mine. They are messy to make. I wonder if adding flour to ones hands while handling the dough would help, like I do when I shape bread dough? Or my grandma used to take wax paper and center the dough in a long tube and refrigerate. Then you slice off the the cookie like a coin after unwrapping the paper. A great holiday cookie, unless you are like me and love chocolate mint. I will make again and if I discover an easier way I'll let you know. Yummy recipe.

New Wife Tuna Salad

Reviewed: Oct. 31, 2011
The celery seed makes this delicious, outstanding tuna salad--one ingredient that is a must. I added a 1/2 tsp of onion powder as I like onion in mine, so I just added this for the flavor. A definite keeper.

Balsamic Strawberries

Reviewed: Jul. 4, 2011
Awesome flavor combo! Don't use the cheapest basamic out there! Use a mid level price range one. 2nd time I let the sauce cool before adding over ice cream. First round was too soupy for us. I also added 2 Tablespoons of brown sugar instead of Splenda, and we doubled the sauce ingredients for serving over ice cream, pound cake, or french toast. Yummy!
