I made this for a light lunch I hosted today. I added a bit more curry powder and skipped the cranberries and pecans. Instead of regular Mayo, I used Kraft light made with olive oil and squeezed a fresh lime for the lime juice. This salad was served along with a cracker and cheese plate. It made a lovely light lunch and is now awaiting the return of the children from school. I made it in the past with dried cranberries and chopped walnuts. In all this is a very versatile and tasty chicken salad. Thanks for posting! I will definitely use it again!
