Amazingly Easy Irish Soda Bread
The flavor was lovely. I wish I'd followed another reviewer's advice and lowered the oven temperature. The outside was super crusty, bordering on burnt, and the inside was really dense and moist. I flattened the dough down a bit before baking so it wasn't such a round shape, but I think it needed more than that to get an even bake. Will probably try again, but using a lower temp.

Gingerbread Cookies
This recipe is nearly identical to the one that my family has been making for the last 3 generations. A few helpful tips that we've incorporated into our routine: 1) DO NOT OVERMIX. The more you mix, the stickier it gets. 2) Combine the flour+spices first and set aside so that it can be added quickly to the mix. 3) Don't add the cold water until right before you're ready to add the flour+spices. If it sits around and starts warming up, the dough will be stickier. 4) Use only 6.5 cups of flour in the dough and then cover your work surface with flour when you go to roll/cut. It helps keep the dough from sticking to you and your rolling pin.

Cindy's Pumpkin Pie
This went fantastically! Per other users' suggestions, I made sure that the ice cream was totally melted by zapping it in the microwave a bit. When I stuck my finger in, it was room temperature. I also made sure to mix it into the pumpkin very, very thoroughly. Finally, I went nuts with the spices and added a heck of a lot more cinnamon that was strictly necessary, as well as a bit more nutmeg. The pie turned out VERY light and fluffy (bubbles from the ice cream, maybe?) and everyone who tasted it was very interested in the recipe. Super easy, super tasty! Will be making many more in the future!
